Mom's Baked Beans I

This didn't have enough beans for me, so I am rating what I did. I used 2 pork&beans undrained, 16oz size cans, 2 drained pinto beans, 2 drained dark red kidney beans and 1 can of refried beans. I used 3 medium onions, doubled the molasses and barbeque sauce (Kraft hot) and used 2 tsp of hickory smoke salt. Do not add any salt! I didn't have any liquid. Cooked it all in a big bean pot and stirred every half hour. Total cooking time 2 1/2 hrs. on 325F.

Black Beans and Rice

I made this with adding another heaping tsp of cayenne, 1 cup instant brown rice instead of the white rice, reduced the broth to 1 cup and cooked it for only 5 minutes. Then I added the beans and let the whole thing sit while we ate our salads. It was very moist and tasty! Way more than the two of us could eat at one meal. For the leftover, I will add a can of stewed tomatoes, a can of whole kernel corn drained, some more cumin and cayenne and some fresh lime juice. It will be filling enough to have as a main course.

Mock Pasta Alfredo

This was thick to begin with in the processor. I warmed in on a Very low heat (2) and added imitation crab pieces to it. It did get thinner as others stated, but was right consistency for serving. Taste wise I thought the garlic was overpowering (& I love garlic!). There was no Parmesan in it and that flavor was definitely something that should be in Alfredo sauce, mock or not. Luckily I only made a half recipe for the two of us, so with what was left over I will add about 1/4 -1/2 c of parm to improve the flavor. I doubt if I will make this again.

Poblano Chile Pepper Soup

When you have to make so many changes to a recipe, it is not the original that you are rating, so unlike many other reviews who told all the things they added to make this delicious, I will say it was way too much work for a soup that was not to our liking. It wasn't that spicy at all, it was relatively thin and really lacked a good flavor. Won't bother trying to improve on it.

Ribley Soup

This is not thick gravy as another reviewer wrote. If made correctly it's like tiny dumplings in the beef soup. It tasted quite good and is an extremely cheap soup that is very filling.

I only used 1 big boneless breast with these measurements. Next time I will add a fresh Serrano or jalapeño pepper. Lime was right for us.

4* for taste, but these beans took alot more time to be tender than this recipe states. Using canned beans might be a better idea for those that don't have 6 hrs to let dry ones cook!!!

Baked Salmon with Pineapple Salsa

With my adjustments--instead of diced red and green peppers I used a cerrano and a jalapeno with their seeds and used a bit less grated ginger than called for. It was very good, easy to make and I also think it would be good on a grilled pork chop.

Grilled Tropical Tuna Steaks

I used crushed,drained pineapple as another reviewer suggested because I had no preserves in the house. It was a delicious marinade, but I only used 2 tuna steaks for us.

The Best Fresh Tomato Salsa

loved it! Just remember this is fresh salsa so it needs to be drained well before serving. I did add another pepper though.
