Absolute Best Potato Casserole

Reviewed: Sep. 13, 2003
I was dissapointed in this casserole. It took a lot of preparation and cooking time and di not turn out that great. The potatoes stayed raw and hard at the bottom...they never fully cooked through. The corn flakes did not really give it added taste. We only ate the cauliflower and ham mixed with cheese sauce (which I thought was too thick and only used half of it) off of the top. I would not waste my time making it again.

Antojitos Minis

These are quite tasty!! However, they do not come out of the muffin tin too easily. They started to get soggy and they beans and tomatoes were falling off. You have to let them sit a bit longer to harden but even still. While they are a little messy, they definitely are tasty.

Chocolate Chip Pistachio Cookies

Reviewed: Dec. 21, 2003
A good cookie. Nothing special but they looked pretty on my Christmas cookie platters. I sprinkled with powdered sugar, like suggested, and it made them look better. Also...I added a few drops of green food coloring to the pistacchio section for an added greeen touch. Very pretty.

Slow Cooker Stuffing

This had a super taste! I eyeballed the broth measurement. If it ends up too wet, you can always add more bread cubes (I did half way through).

Creamy Peanut Butter Fudge

Reviewed: Dec. 20, 2004
This recipe was good but wayyyyyyyyyyyy to sugar-y for me. However, an excellent alternative is to make this a chocolate peanut butter fudge. Right after you stir the marshmellow cream in, pour half the mixture over a bag of semi-sweet chocolate chips in a seperate bowl. Then add half the jar of peanut butter and vanilla to the remaining mixture. Spread the chocolate fudge, then peanut butter fudge on top and swirl with a spoon for a marble effect. THAT was a five-star fudge!

A really good potato! Just be careful when you scoop out the cooked potato- the skins are very fragile!
