London Broil II

I bought a thick cut of meat labeled "London Broil." I marinated it in this sauce for about 45 minutes and put it on a medium high grill for about 10 minutes per side. It was definitely red in the middle which was fine. Very tastey. Will use it again.

Cream of Asparagus Soup I

I'm glad I made a practice batch. Definitely too salty using 4T bouillon powder! Minus the salt, the flavor was deicious. Will adjust bouillon to 4 tsp next round. I liked the pureed version. I don't like to know I'm eating cooked celery. May add a bit more flour for thickness next time.

Scalloped Corn and Broccoli

I used two bundles of fresh flowerets instead of frozen broccoli. This is a sweet dish to use during a meal instead of at dessert. I baked it for Thanksgiving but it could be used fall and winter any time.

Yummy Yam Casserole

Since I used canned yams, I skipped Step 2. This recipe is good if you want a sweet sensation during the meal instead of just at dessert.

Cottage Cheese Potatoes

I baked instead of boiled the potatoes. Substituted mayo for sour cream. Served this recipe twice over Thanksgiving and it was a hit both times. I'll use this recipe often.

Greek Pasta Salad I

Served this as a side salad so omitted the pepperoni. Made a day ahead and thought the mushrooms might wilt so left them out, too. Used a green bell instead of red--still looked pretty and was a big hit.

Onion and Sausage Pizza

I used spicy pork sausage, black olives, 1/4 of one onion sliced in half circles. Added seeded chunks of Super red chile and yellow bell pepper from the garden--baked for 15 minutes on Valentino's crust (kneeded for 7-8 minutes). Mouth-watering pizza.

Valentino's Pizza Crust

I needed a crust in a hurry--I was hungry--and this one fit the bill. I kneeded the dough for 8 minutes before letting it rest. The first pizza baked for 20 minutes was too browned. The second made from frozen dough baked for 15 minutes--perfecto!

Chrissy's Sweet 'n' Sour Tomato Salad

Great with cherry tomatoes from the garden sliced in half. Also added yellow squash half-moon slices and Hungarian and Sweet Banana peppers, seeded and cut in rings. Great tomato salad.

Sweet and Sour Zucchini Salad

Followed directions, no modifications. Served with potato salad with radishes and olives--recipe on this site. This salad overpowered the potato salad but the combination seeemed to work well. Might add dill and more pepper to the potato salad next go-around.

Fabulous Orange Cake

Followed the directions. Perfect end to a nice meal. Guests loved it. Served with (Ben & Jerry's recipe) homemade orange dreamsicle icecream Next time will go with a different flavor icecream--something nutty. The orange's were so complementary.

Crab Quiche I

Imitation crab is great with this recipe if you chop it in the food processor before you add it. The sweet crab needs blends with the tart swiss cheese for a nicely balanced taste. I added chopped green onion after baking to give it a fresh look. Pretty dish.

Onion Quiche

Plain old onion quiche. Maybe this would be a a 5-star recipe if I ate it with fresh strawberries, payaya or mango. I didn't use Vidalia onions; in season, that might have been a treat. I'll make it again if I want to use up onions and eggs.

Garden Veggie Pizza Squares

Just bought my first pizza stone so I'm not a pizza expert. Used store bought rice crust (*) and only put on half the veggies listed. It was great! I love this recipe. You can't go wrong with this one.

Stuffed Pepperoncini

This is a great garden pepper recipe. It worked just as well with fresh picked Aneheim, Sweet Banana, Hungarian Wax and Yellow Bell peppers. One guest took the left over stuffing home with her. The dish was different, but a real hit.

Cheesy Sausage Zucchini Casserole

I substituted ground turkey and cheddar and added a sprig of thyme and minced garlic. Very tasty. Also used fresh mushrooms tops. Good dish for garden zucchini.
