Coconut Macaroons III

very good cookies! i just generously greased my baking sheets and took the cookies off the sheets immediately after i took them out of the oven. no problems with sticking or anything! i also used 1 1/2 tsp of vanilla and then 1/4 of almond extract (i only had 1/4 left in my bottle...) and this turned out really well. then i dipped half in melted chocolate chips and half regular and brought some to a party..everybody loved them! they're delicious...must try these!

Almost No Fat Banana Bread

wow! i must say, i'm pretty impressed with this recipe. i wasn't really expecting much because i've made a couple low-fat/no fat banana breads before and none of them turned out very well.. like they were EDIBLE.. but not really banana bread. after reading some reviews, i decreased sugar (and in my case, i used splenda) to 1/2 cup, increased the applesauce to 1/2 cup, used 3 medium bananas, added a tsp of vanilla, 1/8 tsp of nutmeg, and 1/4 tsp salt, and used 3/4 cup white flour and 3/4 cup wheat flour, and also mixed the dry ingredients and wet ingredients seperately and mixed them together last. seems like a bit of changes, but i still give the recipe 5 stars just because you can hardly (at least for me) tell that it .. has virtually no fat. oh, i used 1/4 cup egg substitute instead too. :P anyway... make this bread! pretty good stuff.

Creme Brulee French Toast

mmm... soo good! i made this for christmas breakfast and it was delicious. a little pesky that you have to bring it down to room temperature first before baking, because it did make us have to wait longer to eat, but it's okay. worth the wait!! i made this with challah bread and it was wonderful with it. everybody loved it...thanks!!

Baked Pork Chops I

A very tasty dish, although my pork chops did not come out as tender as i thought they would have, according to the other reviews. but, it wasn't all that tough or anything, and the taste really made up for it. made it for my family and it was well liked! served it with some rotini pasta and steamed brocolli/carrots.. also sauteed some garlic/onion/mushroom and added it on with the soup mixture the second baking time, added lemon and pepper, added more wine, and baked for 30 min. the first time instead of 1 hour. my family wants me to make again several more times!

Berry Trifle

due to a weird supply of ingredients on hand, i had to basically come up with my own version of trifle composed of different recipes. i used the custard from this recipe.. and it was sooo good!! definitely making this custard again in the future.

Peppermint Brittle

mmmm!! this stuff is sooo good and soo addicting. don't mind that other reviewer who said to only give a little since it gets old. i could have all of it if i really wanted to! unfortunately, i was making this to give away as christmas gifts and it was a hit!! everybody loved it. and my family wants me to make more now that there's none left since i gave it all away. i also used the peppermint candies instead and it turned out fantastic. so..i'll be making this again very very soon...

Soft Oatmeal Cookies

amazing oatmeal cookies!!! i added 2 cups of raisins.. wow makes a whole lotta cookies. definitely not 2 dozen..... more like 4?!?? but anyway...no matter!! they're gooood! must make these cookies..

Cantucci Biscotti

wow!! this recipe made amazing biscotti!!! i had my doubts from when i slipped it into the oven until i took it out. i wasn't sure how to shape it very well and i thought that it was a little too moist and wet, especially for something that would soon turn crunchy. but...after the second baking, it was crunchy and delicious!!!! this is the second time i've made biscotti, and this recipe turned out MUCCCHHHH better than the first did. i also halved this recipe to just try it out first and used only 2 eggs, which turned out great. i've now made it twice, the first, a hazelnut version with frangelico and a second almond version with amaretto. both were very delicious!! i dipped these in melted chocolate.. delicious dipped in coffee... now i'm addicted! i'll be making them whenever we're running low so we always have them!

Banana Bread

good banana bread.. made into muffins. tasty and very ..springy texture. got good reviews from family members. just be sure to add a bit of nutmeg, cinnamon, and vanilla extract. was very easy and quick to make opposed to other banana bread recipes.

Wilderness Place Lodge Cookies

i quartered this recipe just to test them out first before i made more cookies than we could handle... they are delicious, though!!! they were easy and quick to make.. and they were a very good variation from the regular oatmeal raisin cookie. i will definitely make again!!
