Pan-Fried Asparagus

Darn Good Chili

Very good - even better warmed up the next day. I cut the chili powder to 2 Tblsp and I was glad I did but some may like it hotter and I only simmered for 45 minutes.

Homesteader Cornbread

Cut recipe in half and used a 8x8 pan. Did not have much cornbread flavor but everyone still ate it and it went well with the spicy chili we were having. I am not sure how to increase the cornbread flavor - maybe increase the cornmeal and decrease the flour?

Exquisite Pizza Sauce

Very good. Made recipe exactly as is but cut it in half as recommended by others that did not want to make a huge pizza. 1/2 of the recipe made a 13x9 pan no stretching required.

Creamy Au Gratin Potatoes

Very good. I liked this recipe more than other au gratins I've tried because it did not have too much cheese in it - you could taste the potatoes too! I will cut down on the butter and milk next time - may be in half because it had a lot of liquid so I had to scoop out the potatoes.

Make Ahead Lunch Wraps

I would give this 10 out of 5 stars if I could. We ate a couple the night I made them (note - still microwave them for a couple of minutes and they taste better the night you make them) and I wrapped 10 in the freezer. Take them out, microwave them for about 3 minutes, and you have a healthy snack or lunch. Pleased the whole family - even my 6 year old liked them after I made her take a bite!

Spanish Rice Original

Pretty good, but not what I expected for a Spanish Rice recipe. The bacon taste is on the over-powering side. Maybe if I left the bacon out or used less I would like it better, but I will probably not try the recipe again.
