Sausage, Kale, and White Bean Soup

Liked the base recipe, but as written is a bit bland (so I add garlic) and pre-cooking the kale seems unnecessary. Couln't find linguica sausage..so I used Italian and crumbled it. I also used a parmesean rind when cooking the beans (advice from another review..good idea!) and sprinkle with parmesean when done. Use French bread for dipping and eat up..it's really a pretty healthy soup (I cut the sausage to ~12 onces). Thanks for sharing!

Frosted Cranberries

Loved these..great way to get cranberries into your diet. My husband thought they were a bit off/tart tasting..so next time I used 1/4 tsp of both orange and vanilla flavoring in the water/egg white mix..the flavoring helped balance the flavor for him..now he loves them too :) Thanks so much for sharing!!

Company Cauliflower

Very nice dish for a rather bland vegetable .. has kind of a sweet taste ..and it's pretty light on the calories to boot..the downside being it dirties two dishes (steaming and cooking)..reminding me nothing in this present life will ever be perfect :) Will make again. Thanks for sharing!

Chocolate Biscotti

Loved these, though the dough is sticky and hard to work with. Mine spread during baking. I only let them cool 5-10 minutes before cutting..using a pizza cutter as another reviewer recommended (though I didn't add nuts..that might add a different dynamic to how/when you go about cutting them) In the end mine were tasty an rock hard - just what I was looking for. Thanks for sharing.

Cauliflower and Kale with Mustard Currant Dressing

Great mix of these veggies together. I choose to add honey to the sauce to make it a sweet dish..didn't have currants, so used dried cranberries. I enjoyed this alot, my husband would have preferred it savory..so maybe I'll follow the recipe, omitting the honey..and getting some currants ( or raisens) . Thanks for sharing.

Spinach Salad With Berries and Curry Dressing

Nutritional, colorful salad..very pretty..thanks for sharing, but we found the vinegar overpowering (maybe I'm a wimp :(). I made it again, using half the vinegar (balsamic only), extra honey..and slowly whipped in a tablespoon of oil at the end to make an emulsion..my husband and I enjoyed it much more ..a few more calories, but for us it was worth it for the taste and cling factor. We'll be making it again..thank-you.

Italian Sausage Stew

This is very tasty, easy and satisfying - both the husband and I enjoyed it. I cooked some garlic with the meat and later assed fresh rosemary,thyme, basil..I used regular diced tomatoes and a plain broccoli/cauliflauer mix..as I could not find the Italian blend. I'll do the same next time but might try scaling back on the meat to reduce calories.

Italian Sausage with Farfalle and Broccoli Rabe

Delicious, both me and the husband ate up :).. though I cut the butter in half..maybe explaining why my sauce didn't thicken..no worries, just mixed the pasta in w/sauce over heat..and then removed heat and let it cool/soak while I finised the dishes. I used the Parmesean reggiano..and found dish plenty salty w/o adding the called for salt. Never used the broccoli rabe before, so I was concerned with finding it and prep..but found some at my Indiana Meijer(maybe not that uncommon?) ..I cut most of the stem away..keeping mostly the leaves and small heads. After 4min of cooking..this was plenty wilted..(I'll try for firmer next time..very tasty though..the leaves absorbed/coated with sauce nicely). Of coarse..what's not good with a pound of italian sausage? Next time I'll probably cut the sausage in half to help with the calorie count.

Thai Ground Chicken Basil

Love this..though my husband didn't much care for it. Served with white rice..and a litle extra fish/soy sauce to flavor the rice. Didn't have Thai chili's..only habanero's(?) so I use 4 and it was too hot..I'll probably cut this down to 2 next time..thanks so much for sharing!

Salmon Chowder

Loved it. Husband really like it. Used canned salmon..but per other review input, I used only 1 can. Initially I thought I should have used both cans, but as a leftover..the tastes had melded more and I'm not sure I would add the extra can? Actually thought it was better as a leftover. I might try and lighten it up a bit next time by uping the broth/vege content and/or substituting some milk for the half and half..but I hate to mess with a good thing..thanks for sharing!!!

French Bread

I made this for my husband who loves French bread..he thought the crust was great..it had that crusty exterior indicative of French bread, but the inside was too dense..it should have been lighter..maybe I should have used less flour (?)..I managed to work 5.5 cups of the flour in..maybe I did something else wrong..I'm not an experienced baker. Thanks for sharing.

Sesame Broccoli Salad

Tasty, healthy, and quick..both I my husband enjoyed. We didn't let it sit overnight, we ate it lukewarm, right after it was made. The one issue is the marinade is a bit runny..I wish it would stick better, some reviews recommended adding more oil..but I can't bring myself to add the fat calories..maybe I'll try honey in place of sugar/splenda?

4H Banana Bread

I made it twice..it was ok. Ater the first attempt I purchased and used a stone loaf pan in hopes it would help the bread cook more evenly, but both attempts were the same..by the time the center tested done..the edges were over done. Think I'll move on to a different recipe.

Cranberry Waldorf

Loved it - and its even healthy. I make a meal of this stuff. I use black walnuts as the nuts..and use the food processor for chopping not only the cranberries, but also the apple and celry..its quick and works great. Thanks for sharing.

Roasted Garlic Cauliflower

The first time I thought this was OK..not really memorable, but my husband liked it ..preferring it to mashed cauliflower (yeah, we were doing the Atkins thing). So, I decided to revisit the recipe. This time I replaced my pre-grated parmesan (yeah.. the kind in the green shaker bottle), with some Parmigiano-Reggiano I grated fresh, this melted better and allowed you to actually taste the cheese, as the garlic in this dish can be pretty over powering. I thought it was pretty tasty this time and intend to use it again. Thanks Shellery.

Shrimp Scampi Bake

Easy and tasty (and a good find for someone on the Atkins diet) but seems to be missing a little something (salt?)..Parmesan cheese makes a nice topper. The 12 minute time is too long (used 21-30 count shrimp) - the shrimp was tough..changed time to 7 minutes and it turned out much more tender. Thanks for sharing.
