5 Minute Microwave Cornbread

I was looking for a microwave bread recipe not expecting anything so I was doubly pleased to find this one because my family loves cornbread. I made it with white whole wheat flour (it was all I had) and skipped the egg because of allergies, then doubled the recipe. It turned out surprisingly well albeit a little dry but I have a very powerful microwave so I should have cut the time down. If you like a sweeter cornbread then add more sugar but this is a great basic, very quick recipe.

Easy Chocolate Bundt Cake Glaze

I used dark chocolate chips because that's what I had on hand and it was so good. Simple but with great flavor, and made my so-so cake taste much better.

Easy No Bake Cookies

I've made this twice now, both with butterscotch pudding and it's so good. The first time I followed the recipe as is using margarine and they were great. The second time I subbed coconut oil for margarine and coconut milk for the milk and they were still great. My only critique is that they are slightly too sweet for my taste. I think next time I make them I might decrease the sugar by half a cup. But it's so nice to finally find no bake cookies that don't use peanut butter.

Poor Man's Cookies

Sometimes the simple recipes are the best. I'm always searching for eggless recipes since my daughter is allergic to eggs and is at the age where she has to eat what we eat. These cookies turned out very tasty. They almost had a butterscotch flavor to them and made me think how good they'd be with chocolate chips or peanuts in them. I followed the recipe almost exactly, except I added a little more water because the dough seemed dry. Once I started working it, though, I realized parts were too wet but it didn't seem to affect the cookie. They were crispy on the edges and chewy in the middle. Mine did spread, perhaps because the dough was so wet. Definitely a keeper.

Cherry Chip Cookies I

Such a great basic cookie recipe. I was looking for an eggless chocolate chip cookie recipe and found this one. I substituted semi-sweet chips for the cherry chips and they turned out wonderful. Very crispy and light but with a great flavor. I only had half a cup of powered sugar so I used a half cup of granulated and they still came out great. I did increase the oven to 350 degrees but my oven runs colder, and baked for fifteen minutes. Still, they were delicious.

Caramel Icing

The icing was ok. I only put in one and a half cups of sugar because it was really sweet, even for a powered sugar icing recipe. That made the icing very thin, like a glaze, so I let it set up before I put it on my cake but it was still runny. It was ok to make in a pinch since I didn't have ingredients for any other kind of frosting, but next time I'll look for a different recipe.

Real Traditional Irish Soda Bread

I made this for my brother's traditional Irish boiled dinner and it turned out about how I thought. It's rather plain but would be great with jelly or some other spread on it. My only complaint was how sticky the dough was as I was trying to knead it. I had to add a LOT of flour and work with it more than I would have liked because I was afraid of making the dough tough. It could have been because I didn't have buttermilk so made sour milk instead, but I've never had any problems substituting that in a recipe before. Overall, it was a decent bread and I really liked cooking it on the stove top since I've never done that before.

Banana Bread

My 15 month old daughter is allergic to eggs so I am always looking for eggless recipes so she can eat what we eat. This is a fantastic banana bread recipe and a definite keeper. It makes me wonder why I've been putting eggs in my banana bread all these years since the mashed banana keeps the dough together nicely. My only change was to use margarine instead of shortening and I added a teaspoon of vanilla just because. It turned out very soft and with a great sweet banana flavor. Sometimes the simplest recipes are the best ones.

Eggless Ginger Cookies

I used ginger paste and I could barely taste the ginger in the cookie. However, they ended up tasting just like Archway molasses cookies, which are some of my favorite. My daughter is allergic to eggs so I wanted a Christmas cookie she could have. This made a tasty cookie. I only used three cups of flour and rolled them into balls, coated them with sugar and pressed them with the bottom of a glass like someone else suggested and they turned out fantastic.

Cinnamon-Raisin Granola

I love this recipe. It's simple, fast, and turns out so good. I've made it countless times and use it as both cereal and a snack. I've left out the coconut and raisins when I didn't have any and it still was good. I do use more cinnamon than the recipe calls for but I love cinnamon. I dump the oats into the saucepan like for no bake cookies and combine it that way because I don't want to dirty another bowl and it comes out just fine. I'm about to go make some more right now!

Mushroom Pork Tenderloin

Practically foolproof to make and the gravy was SO good. I don't even like gravy but I loved this. The only thing I did differently was use tarragon because I didn't have marjoram and made mashed potatoes instead of rice. I can see myself using this recipe again and again and tweaking the spices each time to give it different flavors. But, it was very good as is.

Cranberry Yogurt Muffins

I like this recipe because it doesn't have eggs in it. My daughter is allergic to eggs but loves breads so it was nice to make some muffins she could eat. It did turn out chewy and kind of sticky, but that might be because I used soy milk instead of regular milk. I used dried cranberries and tangerine because I didn't have oranges, and the flavor was still really good.

Nana's Barbeque Sauce

It came out a little sweeter than I like even though I added some smoked paprika and chipotle chili poweder. I ended up putting a little bottled sauce I had in with it to give it a better flavor.
