Slow Cooker Chicken and Dumplings

Just OK, very salty even with the healthy request versions of the condensed soups. Only used 1 can of biscuits and even thought that was too much! The chicken itself was good, but the gravy/dumpling part was just salt overload.

Laura's Quick Slow Cooker Turkey Chili

Phenomenal! The store was out of ground turkey so I used ground chicken. Reduced to 1 can tomato soup, substituted cannellini beans for the black beans, added diced tomatoes with jalapenos, drained. Omitted red pepper flakes and allspice. Put in slow cooker on low for 8 hrs. Forgot to spray the crock (oops) so I stirred it a few times. No big deal. Yummy with cheese & fritos!

Parmesan Garlic Bread

awesome! looking for an alternative to the nasty preservative filled frozen options, I stumbled upon this recipe. I only use 1/2 stick of butter, lots of parmesan, much less garlic salt, then some garlic powder, basil, oregano & italian seasoning. baked at 350 along with baked spaghetti and it was perfect after 10 mins. gave 4 stars because the garlic salt as written was way too salty at my first attempt.

Braised Balsamic Chicken

Fantastic. I made this with Italian style diced tomatoes and forgot to add more spices (oops!) but it still tasted great. Turned out really moist and flavorful. Serve with brown rice and green beans!

Sweet Restaurant Slaw

I made a lot of modifications, but it was great! (1) Mayo instead of Miracle Whip (2) Dollop of Sour Cream instead of Vegetable Oil (3) Less sugar (~1/3 cup) (4) More vinegar (~2 Tbsp) (5) Celery Seed instead of Poppy Seed It's not science, I just threw things together until it looked right and this was about what I used. Turned out great, I think this is a very flexible recipe!

White Cheese Chicken Lasagna

Fantastic! A new favorite. Some changes: (1) I upped the garlic and added italian seasoning. (2) I layered by mixing the extra cheeses, spinach (fresh!) and chicken. Sauce - Noodles - Cheese (1/2) - Sauce - Noodles - Cheese (1/2) - Sauce - Noodles - Sauce!

Four Cheese Macaroni

I make this all the time and it's fantastic! There are several required modifications, which is why I put it at a four stars: (1) Use 4 Tbsp max of butter when first mixing with the pasta, 9 is overkill (2) Use 1 cup mozz, 2 cups cheddar/jack blend, 1 cup sharp cheddar for the shredded mix, only add 3 cups of this to start with (3) Omit Eggs (4) Halfway through baking, remove the dish and mix up to better combine the melted Velveeta and shredded cheeses. Then add the remaining 1 cup of shredded mixture on top to give some crunch to the top layer.

Gingerbread Men

I was in the mood to make gingerbread, so I looked for the easiest recipe I could find - this was it! The dough was easy to work with and was flexible enough to add some flour during rolling. The ginger flavor was great but not too overwhelming. Regarding texture, the response I most often got was "These are the softest gingerbread cookies I've ever had!" I decorated by just putting canned frosting in a ziploc, snipping a teeny tiny corner and piping. Good times!

Tortellini Soup I

This soup was incredible! I used chicken broth instead of beef broth and added extra tomatoes and zucchini. The flavor of the spicy Italian sausage was amazing. This is the best soup I've ever made! (Jamie's Minestrone on this site is the second best!)

Baked Oatmeal I

This was so good! I halved it for my small family and baked it in a pyrex for 30 minutes, after letting it sit at room temp while the oven preheated. I also made the unsweetened applesauce for oil substitution. Next time, I think I'll add less sugar to the mix as it was a bit too sweet to feel healthy :)

Baked Zucchini Chips

I had a huge zucchini given to me by a neighbor, so I gave this recipe a try. It tasted a lot like eggplant parmigiana, but I was looking for something crispier. If I try this again, I'll try to slice even thinner. Personally though, I think zucchini is best marinated in Italian dressing and grilled on a skewer!

Antipasto Pasta Salad

This was pretty good and keep in mind that it makes a ton! I nixed the black olives and used a light balsamic vinaigrette dressing instead of the packet + vinegar + oil. I wasn't a huge fan of the cubed Asiago cheese, I think next time I'll finely shred it. The flavor was just a little too strong in cube form!

Barlow's Blackened Catfish

I make a very very altered version of this recipe, but it turns out fantastic! Basically I thaw my catfish fillets, rinse, then cover with Cajun seasoning. I fry them up in hot olive oil for ~2 mins/side. Then, I cover with the Italian dressing and bake at 350 for 20 mins. It's really good and simple! Serve with green beans and lo-sodium dirty rice mix minus the ground beef.

Actually Delicious Turkey Burgers

For 1 lb of ground turkey, making 4 burgers: ~3 Tbsp onion, handful of parsley, 1/4 cup bread crumbs, 2 garlic cloves (this may have been too much), salt, pepper, seasoning salt, some worcestershire sauce. I did lightly flour the patties before frying, 6 mins/side. Served with lettuce, tomato, mayo on wheat rolls. Yum!

Great basic recipe. I make a million modifications, though! More macaroni, boiled/chopped chicken breasts, more cheese (Mexican blend), just 1.5 cups milk, add fresh mushrooms, onion, frozen peas & carrots, substitute cream of mushroom for one of the cream of chickens - and use lo sodium soup!

Meatball Sandwich

This is a great recipe, and so much easier than the meatballs I traditionally make. No pre-frying, just bake and you're set! So good that my husband came home for lunch so that I could warm them up special for him (just not the same in the microwave, I guess!) I thought they were a little dense, though, but I added 2 eggs so that might be my fault.

Mmm-Mmm Better Brownies

WOW! These brownies are incredible! I made the butter substitution. They were really fudgy, but tough to get out of the pan looking nice. Who cares though when they tasted this great!

Magic Marshmallow Puffs

I was looking for a quick dessert recipe given what I had on had, and this matched so I gave it a try! Really tasty and sticky and sugary! Wouldn't recommend for anyone worried about getting messy though - this is definitely not a company dessert, unless your company is a bunch of 8 year olds for a sleepover ;-)
