White Bean, Turkey, and Sausage Chili

Wow!!! I think I may like this better than my red chili. Only changes were I removed the sausage cases and browned (didn't fully cook) on the stove before cutting into pieces for the chili (instead of cooking in the oven). Also, added one 14 oz can of diced tomatoes with basil, garlic, and oregano. Used 2 jalapenos (not the other 2 that were optional). Simmered on stove for probably 4 hours. A little cheese, a little sour cream. Was amazing!!!

Spinach Brownies

It is unfair of me to rate the recipe as written because I made a lot of changes and LOVED them. I thawed/drained 10 oz frozen/chopped spinach overnight. Sauteed about 1/3 yellow onion & 1 clove garlic in 1 tbsp butter & about 1 tbsp olive oil (no other butter otherwise). Used only 1/2 cup flour and also 1/2 cup italian bread crumbs. Used about 1 cup six cheese italian blend and about 1/2 cup parmesan. Cooked in muffin tin for about 20 minutes (15 may have been enough). Looking forward to making again :).

Mini Pumpkin Whoopie Pies

These were insanely delicious!!! The cookie can be enjoyed without the filling. I did make changes based on other suggestions... for the filling - used 8 oz Philly neufchatel cheese, 4 tbsp butter, 1.5 tspn vanilla ext, and 1 cup powdered sugar. Also added just over 1/2 tsp nutmeg and about 1/2 tsp cloves to the cookie batter.

Carrot Souffle

This was so delicious, I could have eaten the whole thing in one sitting! I had a 16 oz package of baby carrots, so didn't chop them before boiling. Also did 1/4 c. white and 1/4 c. brown sugar (instead of 3/4 c. white). Add cinnamon and slightly more vanilla extract than suggested. Also I added ingredients to food processor to puree before cooking. A perfect side for Thanksgiving (or any night!)

Scrumptious Salisbury Steak in Mushroom Gravy

We really enjoyed this meal... the changes I made on the 2nd go-round... used Italian bread crumbs instead of crackers, no poultry seasoning, and used an 8 oz container of fresh baby bellas instead of canned shrooms. I served it with egg noodles and garnished w/ a bit of parmesan - delicious :)

Russian Chicken with Feta Cheese

We really enjoyed this dish! I didn't have tomato paste, so omitted that. Otherwise, pretty much followed as written. I think this dish would be terrific with some meats as well, maybe over a steak or with a roast. May saute up some baby bellas with it too :)

Indiana-Style Fried Cabbage

wow! my family loved this dish... I served it with smoked turkey sausage and homemade irish soda bread w/ dried cranberries. I followed the recipe as written. Looking forward to leftovers tomorrow :)

Saucy Chicken and Asparagus

My family really loved this dish! The curry really makes it. I buy thin asparagus so didn't precook it. Didn't have lemons or lemon juice on hand, so substituted distillled white vinegar. Actually made the dish 2 nights in a row - though on night #2, instead of asparagus, I used fresh broccoli (didn't precook) and fresh baby bellas (which I sauteed in a little olive oil). Both variations were delicious!

Fresh Asparagus and Chicken Casserole

My husband and I really enjoyed this dish - I made just a few changes from the original. I had just over 1.5 lbs of chicken (Perdue breasts) which I partially cooked on the stove in a little bit of olive oil (I did season the chicken w/ salt, pepper, & a little paprika). Then cut into pieces and added to celery/peppers (I used green, not red)/onion mixture. I did use a chicken bouillion to make broth and didn't find the dish too watery at all. I also added garlic powder to the mixture. Mixed everything into a 9 x 12 pyrex (didn't "layer). Then cooked as suggested. My asparagus was thin to begin with so came out very nice after 30 min in the oven. I didn't get the celery and probably wouldn't include it again. Probably overdid it on the parmesan, but we like cheese in this family :).

Tantalizingly Tangy Meatloaf

This was my first effort at meatloaf and I made it for my "soon-to-be" and his mom. I stuck to the recipe, although increased i proportionally to go with 1.7 lbs of ground beef. Let's just say there was NO leftovers, it was delicious. I just served it with some sauteed baby spinach. The pineapple preserves really added something special--the glaze was out of sight; being a "sauce lover", I kept spooning from the edges of the pan for more. I'll definitely make this again. It's Chili by George!!

This was my first attempt at making chili and my soon-to-be loved it! He said I can make it anyday and he'd be happy. I cooked this on the stove (on low for approx. 4 hours). The only changes I made were using 2 cans (15 oz) of diced tomatoes in sauce and 1 can (15 oz) of tomato sauce vs. tomato juice & tomato sauce. I used 2 cans of kidney beans, no pinto beans. Left out the green pepper too. Can't wait for leftovers tomorrow. Thanks George!!!
