White Bean, Turkey, and Sausage Chili
Wow!!! I think I may like this better than my red chili. Only changes were I removed the sausage cases and browned (didn't fully cook) on the stove before cutting into pieces for the chili (instead of cooking in the oven). Also, added one 14 oz can of diced tomatoes with basil, garlic, and oregano. Used 2 jalapenos (not the other 2 that were optional). Simmered on stove for probably 4 hours. A little cheese, a little sour cream. Was amazing!!!

Spinach Brownies
It is unfair of me to rate the recipe as written because I made a lot of changes and LOVED them. I thawed/drained 10 oz frozen/chopped spinach overnight. Sauteed about 1/3 yellow onion & 1 clove garlic in 1 tbsp butter & about 1 tbsp olive oil (no other butter otherwise). Used only 1/2 cup flour and also 1/2 cup italian bread crumbs. Used about 1 cup six cheese italian blend and about 1/2 cup parmesan. Cooked in muffin tin for about 20 minutes (15 may have been enough). Looking forward to making again :).

Carrot Souffle
This was so delicious, I could have eaten the whole thing in one sitting! I had a 16 oz package of baby carrots, so didn't chop them before boiling. Also did 1/4 c. white and 1/4 c. brown sugar (instead of 3/4 c. white). Add cinnamon and slightly more vanilla extract than suggested. Also I added ingredients to food processor to puree before cooking. A perfect side for Thanksgiving (or any night!)
