Banana Crumb Muffins

We loved these muffins! I followed the 1st reviewer's suggestions and added 1 tsp. vanilla and used 1/2 c. white sugar with 1/4 c. brown sugar. We didn't use extra cinnamon though, we don't like the taste to be too strong. It made 12 big muffins. Use all of the topping even though it seems like a lot and put the topping on right away if you want a yummy, crunchy, delicious topping.

Cheesy Ham and Hash Brown Casserole

Barbecue Beef Cups

The kids loved this! I used 1 lb. of ground turkey. It made 16 cups. I baked the biscuits for 4 min. and then the filled cups for 12 more min. Next time, I am going to try taco meat and add cheese and salsa plus all the fixings.

Taco Pie

My family loved it! Here's how I layered it starting at the bottom: crescent rolls in a 9 x 13 for 8 min., ground turkey browned with onions, taco seasoning, and a little bit of water, salsa, light sour cream (less than the 16 oz.), Mexican cheese, tortilla chips. Excellent and so easy. Next time- I will use fat free refried beans and less sour cream. Yum.

Quick Quiche

I love when I have everything in the house on a lazy Saturday morning for a recipe. I used leftover ham, broccoli, and shredded cheddar cheese. I added cheese to the top at the end and it made the crispy crust so yummy. I had to cook an extra 10 min. or so to let the middle set. The kids and I ate the whole thing while my husband slept. :)

Chocolate Mint Cookies I

I made these cookies for a cookie exchange and ended up with 102 decent-sized cookies. I experimented with the 8-10 minutes trying to keep them from going flat. Sometimes it worked and sometimes it didn't. I ran out of Andes mints and ended up using mini mint Hershey bars in dark, milk, and white chocolate, plus mint Hershey kisses. They all work equally well.

Caramelized Baked Chicken

I give this 4 1/2 stars. Everyone absolutely loved the flavor of the sauce but like many of the other reviewers, I was unable to get it to thicken. The chicken reached the right temperature in an hour, so maybe next time, I will try adding corn starch as one reviewer suggested. This sauce would be good on so many other meats!

Molly's Chicken

This chicken was very good served over rice. I doubled the sauce ingredients and added quite a bit of brown sugar to get the sweeter taste. Be sure to take the skin off, the chicken ends up falling off the bone.

Spring Salad

This is the best salad I have had in a long time- I made it twice in one weekend! The flavors are diverse and yet they really work well together. I used a pound of bacon, green and red onions (a little more than half of a cup), and a mixture of raisins and cherry flavored craisins (again a little more than half of a cup, any combination of raisins and craisins would taste great). I omitted the celery and blanched the broccoli (placed the florets in boiling water for 30 seconds and then really cold water for a few minutes), which made it a brighter green color and gave it a better taste and consistency. It does get a little watery after awhile but it doesn't affect the taste. I recommend letting the flavors sit together for awhile for the best results.

Ham Stir Fry with Couscous

I was trying to use the leftover ham and only ingredients that I had in the house. I was in the mood for fried rice so here's what I did: I put about 4 c. of cooked jasmine rice, all of the ingredients for the sauce in with the garlic cooked in oil. I stirred it and added chopped ham. I left out all of the veggies, the water chestnuts, and the almonds (although I probably would enjoy the almonds). I also added about 3/4 c. of raisins. It was sweet but we all enjoyed it this way, especially the kids!

Creamy Chicken and Rice

I made this for my daughter's "family birthday party" and everybody loved it. I doubled the recipe, using 12 oz. of Velveeta and 8 oz. of shredded cheddar, 16 oz. of sour cream and a big bag of frozen chopped broccoli. I loved the flavor and the crunchy topping but I wish it would have been a little more creamy. Maybe the broccoli caused it to be a little more dry?

These were okay but I felt like I had to add extra garlic, about 1/2 c. sour cream, and quite a bit of season salt. Next time, I may add cream cheese for more flavor.

Lighter Banana Muffins

I couldn't wait- I ate them hot and could not tell that they were lowfat. I followed all of the recommendations and used: 1/4 c. sugar, 1/2 c. brown sugar, nutmeg, cinnamon, and vanilla, plus I added an individual-sized applesauce (the batter was too dry to even stir without it!). I hope they are as good when they have cooled off! ps They were pretty tough the next day.

Mom's Zucchini Bread

This bread was really good! I made a few substitutions: I used 1 1/4 c. white sugar, 1 c. brown sugar, 1 t. cinnamon, and 2 t. pumpkin pie spice. I also squeezed my zucchini to get rid of all of the water. I sprinkled the top with sugar and baked it for 60 min- I wouldn't bake it longer than this, it will get too dry. The kids can't tell there's zucchini in it and I'm not sure I'm going to tell them! This bread would be great toasted with frosting.

Mouse's Macaroni and Cheese

The kids really liked it (of course) and I thought it was okay. It was really cheesy and I didn't really liked the seasoned bread crumbs on the top. I might try a recipe with cheddar next time instead.

Slow Cooker Scalloped Potatoes with Ham

This was very good and fairly easy (the potatoes are a little time-consuming). I sliced the potatoes thinly, put it in the crockpot on high, and it was done in about 2 1/2 hours. The stuff on the bottom got a little brown on high but my husband and I fought over it!

Peanut Blossoms

I made them just like the recipe said and they were delicious. I would underbake them a little bit, no more than 8 minutes; they harden up after sitting. Also, I wonder if people were having trouble with the cookies breaking because of the sugar. I rolled a tray of balls and then dipped them all in the sugar so the sugar didn't get inside of the balls.

Chinese Chicken Fried Rice II

I gave this recipe four stars because my kids really liked it. I was hoping it would have a little more flavor. I substituted leftover turkey for the chicken and added a little cayenne pepper. Next time I'm going to substitute green onion and bacon for the onion and chicken and add extra spices (some form of garlic, red pepper flakes, teriyaki sauce).

Tater Tot Casserole II

I modified this slightly and my husband and I agreed it was delicious. The kids even liked it. I added a small chopped onion to the beef, a can of french cut green beans to the soup and milk mixture, and french fried onions to the top. I baked it for 30 minutes covered (so the onions wouldn't burn) and another 30 minutes uncovered. This was really good. I think the garlic powder gave it some extra flavor.
