Cranberry Orange Oatmeal Cookies

Such an easy but yummy recipe! I had to modify a few things thanks to a European kitchen. I replaced the baking soda with 16g (one package) of baking powder - worked fine. I didn't have any orange zest or extract so I substituted 5 tbsp (75 ml) of juice and added about 1/4 more oats - next time, I'll just leave it out. I used fresh cranberries with no problems whatsoever. I also cooked them for about 14 min @ 180 degrees Celcius. This gave a fairly cakey effect, they probably could have gone for another minute or two, depending on personal preference and oven. Very nice, I can't stop eating them!

Pumpkin Cream Cheese Muffins

The basic batter was very, very good - I had three people ask me for the recipe. I did use the cream cheese bit, but it just seemed too watery. When I make these again, I'll leave it out. I didn't bother with the streusel in the first place.

Cherry Poppyseed Twinks

I had jam from my Christmas package and needed to bring something to a family dinner. The idea of thumbprint cookies came to me. Unforunately I couldn't find any poppy seeds at such notice but I just did without. The cookies are very light and have a subtle taste. Very nice! Tip: don't make the cookies very big (about the size of a quarter) and make sure the thumbprint is nice and deep, otherwise when the cookies melt in the oven, the jam will go everywhere. Also don't make the thumbprint too deep - enough cookie must stay under the jam, otherwise you get a gooey mess when you pick the cookie up. Next time with poppy seeds, though!

Brown Rim Cookies

I was pretty worried when I saw the lumps in the oven that were just cooking in their own butter and didn't seem to be getting any more cooked! But when I took them out and let them sit for a couple of minutes, they turned a wonderful golden color. They've also got a very simple taste - a nice, light buttery one. Still, very nice! By the way - you don't need to worry about spacing on the cookie sheet, these don't really expand.

Grandma's Eggless, Butterless, Milkless Cake

This is one, while it tastes a bit different, is still really yummy... I've got friends who are wild about it and who won't touch it - so it's an an adore or hate situation. Great when you don't have much on hand and rises wonderfully!
