Chocolate Chip Banana Muffins

These were delicious! I added a 1/4 cup more yogurt than called for and an extra banana because the mixture was a little doughy. They turned out great!

Black Bean Soup II

This is way too much water for this soup. I normally read reviews before I start cooking, but didn't this time. I wish I would have! This was way too watery and too plain. I had to try to tweak it, but without much success.

The Casserole

I didn't have tomato soup, so I substituted with tomato paste and water. I don't know if it would have made a difference if I had used tomato soup, but I was not a fan of this dish. I mixed extra cheese in my mashed potatoes, along with milk, butter, salt, pepper, and sour cream. The whole dish was bland, even though I did add garlic powder. My husband thought it was not bad, but my kids wouldn't eat it. I even tried adding ketchup for them per a previous review. The only one who ate it up was my 16 month old, but he eats just about anything.

Spaghetti Chicken Casserole

This was awesome and hit with my family! I did have to omit a few ingredients since I didn't have them on hand, but it still turned out great. I left out the pimento and bell pepper since I didn't have any. It still had lots of flavor! I also added about 1/4 cup chicken broth along with the 1/4 cup white wine, and some crushed garlic. I will definitely make this again. Next time, I will probably decrease the amount of onions.

Perfect Turkey

This makes a delicious turkey! I saved all of the drippings and vegetables after Thanksgiving and froze them. I just recently pulled them out, thawed them, and added chicken in a big pot. I added some more carrots, some brown rice, a little salt and pepper, and a little more dried thyme. I let it simmer on the stove for a few hours. It smelled so good! It reminded me of how good the house smelled when we were cooking the turkey during Thanksgiving.

Honey Baked Chicken II

This is one of my favorite recipes on this site! I use chicken breasts rather than whole chicken pieces. As per previous reviews, I cut the amount of butter in half. I also usually don't have curry, so I substitute an equal amount of cumin and coriander with a dash of cinnamon. Everything else is the same. I bake it covered for 45 minutes and then uncover for the remaining baking time. My husband and kids love this.

Baked Omelet Squares

This is very good and very easy to make! I left out the jalapeno peppers and mushrooms because I didn't have either, but it was still really good. Everyone had seconds and kept saying how much they liked it.

Swiss Vegetable Medley

I thought this was okay, but nobody else liked it. It was pretty bland. I added the 1/4 cup milk per other suggestions and used mexican blend cheddar. It needs something else to give it a little more flavor and it would be really good.

Orange Smoothie

Tastes just like an Orange Julius. There is an Orange Julius store at one of the malls near me. I used a previous reviewers advice and used 1 1/4 cup orange juice. Everything else was the same. I made it in a smoothie blender and it came out frothy. My children loved it!

Spicy Garlic Lime Chicken

I didn't have cayenne pepper, so I left it out. I used real garlic instead of garlic powder. I also realized halfway through that I didn't have lime juice. I ended up using lemon juice. I doubled everything so that I would have enough sauce as suggested in previous reviews. I also added some chicken broth (probably about 1/3 cup) when I added the lemon juice. My family really enjoyed this. It had a really good flavor, although the sauce is what makes it great. I served the chicken over rice.

Wild Rice Chowder

This was a very good and filling chowder. My husband and I both really liked it. My 2 year old liked it, but my 4 & 6 year olds did not really care for it. I used Basmati rice, which is what I had. I didn't have celery, so I used cream of celery soup. I also did not have a bay leaf, so I left it out. Everything else was the same. I did not puree the soup and I don't think it would have made a difference. I shredded the chicken before adding it. It did make a very thick chowder.

Fruited Curry Chicken Salad

This was awesome! My husband said this was the best chicken salad he has ever had. My husband, kids, and I kept eating this. I thought I would have some left for lunch tomorrow, but we ate it all. I did make a few changes. I did not have curry, so I used half cumin and half coriander seed. I sprinkled some cinnamon in with it. I also took the advice of others and used 1/2 cup mayo mixed with 1/4 cup sour cream. I added a few sprinkles of lemon juice to the sour cream. I also used dark raisins and added salt to taste. I left out the onion and celery and it was still delicious.

Mexican Casserole

This was delicious! Everyone in my family loved it! The only changes I made were using the whole taco seasoning packet, not draining the corn or beans, and adding 2 cups cooked rice to the pan before baking in the oven. I really like black olives, so I did top it off with them. When I served it, we mixed sour cream in with it. Will definitely make this again!

Thumbprint Shortbread Cookies

This is a really good shortbread cookie recipe. The only change to the recipe that I made was to add a teaspoon of vanilla. For the topping, I melted semi-sweet chocolate chips and spooned it in the middle of each cookie. I also sifted the cookies with powdered sugar after done.

Glazed Lemon Bundt Cake

I usually read the reviews before I make a recipe, and I wish I would have read these before making this cake. It does not have much of a lemony taste at all. The icing is very runny and most of it ended up on the wax paper. I am giving it 4 stars though because it was easy and my husband and children liked it. My husband did say that it needed more lemon flavor. I will probably make this cake again but with a few modifications.

Italian Spaghetti Sauce with Meatballs

This was very good. My husband and kids really liked it. It took awhile because of the cooking time, but was easy and worth the wait. I did have to make a few changes. I added more garlic (because we love it) than called for and did not use a bay leaf because I didn't have one. I substituted with a small amount of oregano and basil (just a pinch of each, not measured). I also used diced tomatoes and 2 cans of tomato sauce because I did not have the whole peeled tomatoes or tomato paste. I did only simmer the sauce for an hour before adding the meatballs because we were all hungry and didn't want to wait an hour and a half. The only change I would make next time would be to use 1 tsp salt instead of 2 tsp because it was a little salty.

Black Bean Lasagna

This was very good. My husband and three kids (6,4, and 1) all liked it. It is not too spicy for young children. They ate almost everything on their plates. We used corn chips to scoop up and eat it and had sour cream on the side. I did not use the peppers since I didn't have them, and I substituted corn chips for the tortillas. I will make this again, but might try adding black olives (since I love them) to the mixture.

Chicken Spaghetti II

This is one of my favorite meals to make. My husband and my children love it as well. I use Cream of Mushroom soup because I prefer the flavor and I use Cheddar cheese because I don't like Velveeta. I use plain diced tomatoes too. I cut way down on the cheese so that it is not too much. I use between 1/4 lb. and 1/2 lb. instead of a whole lb.
