Crab and Swiss Melts

Easy, and quite good. I imagine you could add whatever sounds good or whatever you have on hand, and use this as a base recipe. The hubby liked it and we both had seconds :D Plan on using a version of this to make a dip/topping for some Ritz crackers!

Stroganoff

This is cheap, easy and good. It doesn't look great, but it is filling, and if you double the recipe, you can eat leftovers for a few days (reheats in the microwave very well). Hubby gives it a big thumbs up, too, and requests it :) Edit: Just made this for about the 5th time, and should add that if it's just two of you, no need to double the recipe - it makes plenty! Also, like others, I don't use the flour, it's thick enough without it :D

Buffalo Chicken and Ranch Wraps

My second time making these, love 'em! Using pre-cooked chicken cuts the prep/cook time significantly, and since you're coating it in bacon drippings and butter anyway... Point: easy recipe, yummy dish!

Sugar Cookie Icing

Consistency is smooth, looks awesome on the cookies (especially as a base-coat before adding details with, say, some buttercream), and the almond extract adds a nice touch on top of sugar cookies that can sometimes be bland.

Crustless Spinach Quiche

Great recipe! I'm an idiot and totally forgot to put the cheese in until about 25 minutes into baking, so I pulled it out and spread some Mozzarella on top, and put it in the last 5 minutes mostly just to melt the cheese - and it actually turned out really good. Big hit with the hubby (who gets tired of the same old breakfast casseroles). I WILL be making this again!

Sour Cream Enchiladas

Great base recipe! It tastes great "as is", but as you can see from other reviews, it's easy to spice up with jalepenos, salsa, add rice or beans to, shred chicken instead of dice - whatever suits you. Nicely done lara!

Spinach Stuffed Chicken Breasts

Good solid recipe. Have so far made this twice and both times it turned out great - very tasty. (I admit I left off the bacon - a luxury I can't afford on a student budget - but the dish didn't seem to suffer for it at all.)

Easy Sugar Cookies

The emphasis of the recipe is on "EASY" and these are super easy to put together. I thought they tasted nice. Nothing fancy, but when you want a quick sugar cookie without a lot of prep/chilling/fuss, this should work well. Make sure your butter really is softened, as other reviewers have pointed out, too.

Chicken Pot Pie IX

Followed the recipe to the letter, and it was the most delicious thing. Woke up the next morning and the leftovers were gone - my hubby polished it off in the middle of the night! This one is going in my "favorites file" for sure, only next time I'm making TWO!
