This has become one of my family's favorites! I use chicken thighs, personal preference, and let me say they were falling off the bone tender! When making for the kids I follow the advice of others and halve the balsamic vinegar and add 1/4c chicken broth. We also prefer using stewed tomatoes instead of the diced...the last time I used diced it was a little too sour for us...a blitz in the food processor before adding the tomatoes to the pan makes the sauce thick without being too chunky. Loved it with potatoes or garlic rice! Very pretty dish that would be suitable for company, besides who doesn't want a new way to cook chicken.
