Creamy Mushroom Soup

The best ever! Just as easy as opening a can but 1 million times better. I didn't add the cinnamon but sprinkled in a little thyme since I love that flavor with mushrooms. Oh and make sure you brown the mushrooms to concentrate their yummy flavors!

Bread Maker Doughnuts

Follow your bread machines instructions! DO NOT PUT THE YEAST ON TOP OF THE SALT!!! Salt and yeast do not like each other, the yeast will never rise....that being said I've made these twice. The first time following the recipe and they came out tasting good but definately not all light and fluffy. The second time I followed the order that the bread machine recommends, liquids first then dry ingrediants followed by a small well in the flour for yeast. They came out super fluffy like at Dunkin Donuts. Yum.

Tex-Mex Chicken and Rice Bake

Super easy way to serve chicken...I just cut up a pound of chicken tenders and coated them with a little chili and garlic powder for extra flavor. I also added a can of black beans. The kids loved it. Start checking your rice at the 45 minute mark...at an hour the rice was a little overcooked for us.

Fluffy French Toast

Kids loved it...and it was really simple to make with just regular old sandwich bread. Nice that I didn't have to go out and specifically buy bread for french toast. This is a regular in our house when we get to the end of the loaf...great recipe!

Braised Balsamic Chicken

This has become one of my family's favorites! I use chicken thighs, personal preference, and let me say they were falling off the bone tender! When making for the kids I follow the advice of others and halve the balsamic vinegar and add 1/4c chicken broth. We also prefer using stewed tomatoes instead of the diced...the last time I used diced it was a little too sour for us...a blitz in the food processor before adding the tomatoes to the pan makes the sauce thick without being too chunky. Loved it with potatoes or garlic rice! Very pretty dish that would be suitable for company, besides who doesn't want a new way to cook chicken.
