Orzo with Parmesan and Basil

This recipe is simple and delicious! After reading several reviews about it, I decided to try it on my family and I made sure to double the recipe. We all loved it! I will definitely make it again!

Dinah's Stuffed Mushrooms

I wanted to make something different this year for Christmas dinner and thought I'd give stuffed mushrooms a whirl. I read through lots of recipes and reviews and liked this one best. I altered it a bit for fussy eaters who don't like anything crunchy. I sautéed finely chopped mushroom stems, onion, garlic and pepper in the liquid from the clams and 2 T melted butter until softened. Then I combined the sauté with everything else in Step 3 and followed the recipe as stated from there. I reduced the overall butter amount by half. Fantastic flavor, I've been craving them ever since!

Brown Sugar Smokies

Super tasty but messy. Love the salty/sweet combo and the chewiness of the bacon and the stickiness of the brown sugar. Big hit in my house.

Red Enchilada Sauce

Followed the recipe pretty much as written except I reduced the basil and oregano to just 1/4 t. Sauce was not watery at all. Good flavor. Will definitely make again.

Slow Cooker Chicken Taco Soup

I made this recipe as stated and found it to be pretty tasty. I will make it again with some tweaking (I like a little more spice). I thought it would be thicker. I drained and rinsed the beans, drained the corn, but added the tomatoes with their liquid. I served the leftovers with some rice - all gone now!

Tina's Best BBQ Lime Chicken

12/7/09 I made & reviewed back in July. I made it again this weekend and marinated it longer - 5 hours - and it was a little too tangy. I think I will cut back on the oil next time. Still a great recipe I'll make again and again. 7/8/09 - This was fantastic! I used boneless chicken breasts (adjusted grill time), kept the same ratio of juice to oil, marinated 2 hours - super great flavor! I reduced the reserved marinade by half and used as final glaze. Thanks for the deliciousness Tina!

Spinach Quiche

Four stars - probably my fault since I didn't follow recipe exactly. Good spinach quiche base recipe. Made one ham and cheese and another with bacon and mushroom. I baked them both for approx 40 minutes at home, transported next day and baked additional 20 minutes. Quiches were too wet. Back in the oven for another 15. Very tasty but still moist. I really squeezed the spinach and strained the cottage cheese. Maybe I added too much cheese? Two cups grated or 8 oz ungrated? Will make again.

Roast Sticky Chicken-Rotisserie Style

Great way to cook chicken - I have to admit, I hadn't considered a low temp for 5 hours. I used a 8# bird and kept spice mix as listed - complete with overnight marinade. Next time I will reduce the salt a bit. Mostly super easy, although I did flip the bird halfway through (started with breast side down). The best thing is no basting required! Chicken turned out very moist. Will definitely make again. Many thanks for the recipe.

Corn, Sausage and Pepper Chowder

Very tasty - even better the next day. For the most part, I followed the recipe except... In step 1 - sauteed the veggies in a skillet, transferred to pot. In step 2 - browned kielbasa in same skillet, transferred to pot. Mopped up excess grease from skillet with paper towel then deglazed with chicken broth to release the fond then added to pot. I used a bag of diced potatoes which seemed to take a long time to soften. Next time I will use red potatoes the recipe calls for. I also found I needed more chicken broth. I will definitely make again. Thanks for the recipe!

Rich and Creamy Roasted Eggplant Soup

I really like this recipe - made it twice in a week. Made as written except I substituted low sodium chix broth - which could explain why it seemed a little bland. I doctored to my tastes - 1st batch added red pepper flakes; 2nd batch added roasted red pepper. Goat cheese or gorgonzola gives a nice punch. Very easy to prep. As for blowing the top off the blender - don't fill it too much and hold the lid with a kitchen towel.

Black Bean and Corn Salad II

Great recipe! I love how colorful it is. Taste is great - the lime juice and cilantro are zingy & fresh and nicely balanced with the creaminess of the avocado. Agree with others about decreasing amount of olive oil. I am making this my go-to recipe for any potluck or gathering.
