Stuffed Kielbasa

A hit at our house. My husband and son both gave it their highest rating. I took one reviewers advice and boiled the sauerkraut in Brown Sugar Twin (she said brown sugar but I'm diabetic). It was wonderful! I used sharp cheddar cheese and next time will try smoked cheddar. Hit the spot! Also since I low carb I used garlic mashed cauliflower instead of the potatoes. Thanks for a great recipe!

Spoiled Baby Back Ribs

A hit at our house. First time I made ribs. Only reason I didn't do 5 stars is because I added to the sauce, garlic, onion powder, dash of hot sauce, and used Brown Sugar Twin since I'm diabetic, and increased the amount. It is definitely a recipe I would use again.

Roasted Red Pepper Soup

Excellent!!! Very yummy! Made it for company today and it was a hit. I added a little red wine and extra virgin olive oil to it otherwise made it as stated. Loved it!!! It will be a keeper for sure.

Zucchini Patties

Definitely will be one of my favorites from now on and I'll make it a lot! I did make a few changes to fit my own low carb diet, by substituting almond meal for the flour, and I added another egg and onion and garlic powder instead of the onions. But I didn't want to give it anything but 5 stars because it was just so good!!!!

Sweet Sausage 'n' Beans

This was incredibly good and my family decided it was a keeper. I probably cannot rate exactly since I did change a lot... I'm diabetic so I low-carbed it and took out the sugar by using sugar free ketchup, and Brown Sugar Diabetasweet and reduced it to 1/4 cup. I also used black soy beans rather than baked beans and increased the amount of ketchup to 3/4 cup. Didn't use the lima beans. So even though I changed a lot, it turned out to be a hit. I added garlic, hot sauce,worcestershire, liquid hickory smoke, and onion powder.

Apricot Brown Sugar Ham

Found this recipe today just before putting my ham in for our Easter dinner. Glad I did! It turned out wonderful, even though I used brown suger diabetasweet since I'm diabetic, and I didn't have apricot preserves but I had some peach preserves on hand and used them. It was great! So even though I didn't exactly follow the original recipe, I am giving it 5 stars. I will use this again.

Slow Cooker London Broil

Wonderful, tender, easy, great flavor... everything to make a great meal. My family loved it. This will definitely be a favorite for us and we'll make it often. I did not have any dry onion soup mix but improvised with beef bouillion and onion powder. Turned out great.

It was pretty good, but not fantastic. It's easier to pound out thin if you butterfly the breast first and then pound thin, then roll up.

Roasted Red Pepper Cream Sauce

Totally awesome to the taste buds! I made it with Italian meatballs in the crockpot, so I didn't need as much of the half and half. I used 3/4 cup only, used a 15 oz. jar of roasted red peppers and blended the whole thing together in the processor skipping the cooking step first. Poured the whole thing over Italian meatballs in the crockpot for 4 hours on low and it was the best. I also added fresh oregano from my garden and a couple bay leaves. This will be made often I can tell! I served it over stir fried shredded cabbage. A good low carb meal.

Honey Mustard Dressing I

Excellent recipe! Although I was not brave enough to add the entire 2 TBS of soy sauce. I added only 1 tsp. As good as any restaraunt dressing, and so easy to prepare! Can't beat that. Next time for more kick will probably use a dijon mustard.

Hot Spinach and Artichoke Dip

Very good. I made it for a lunch with a friend today with crackers. We both loved it. I used Real Bacon pieces instead of cooking the bacon. And I think next time I would use chopped spinach....too stringy otherwise and messy. I also put the artichoke hearts in the blender and chopped them up first. Excellent flavor and know I will make it again and again. Thanks!

Cottage Cheese Chicken Enchiladas

Almost gave up on this because I just couldn't work with the corn tortillas. But after the third one falling apart, I went to the store and got whole wheat flour ones instead. Glad I did. It turned out to be excellent!

Wheat Crackers

Terrific! As others said, excellent base recipe and the possibilities are endless. I used chicken broth for water, ground flax seed, oat flour, oat bran, and wheat germ for part of the flour and the rest in white flour. Used Italian seasonings, garlic powder, and shredded cheese and also used walnut oil and olive oil to add more omega 3s. Nice to have a healthy alternative to some of the very unhealthy crackers and junk food out there. As far as making one cookie sheet??? I guess I rolled mine out pretty thin then cuz I used 4 cookie sheets! Turned out nice and crispy. Great with cream cheese.
