Mexican Bean Salad

Reviewed: Oct. 12, 2009
It may be a little labor-intensive and requires a lot of ingredients but this bean salad is totally worth it! I've never tasted anything like it. The Mexican bean salad turned out fresh, delicious, spicy, with a nice sweet and salty tang to it. It doesn't hurt that it is so healthy too! It keeps very well and is a perfect side and/or snack!

Deep Dark Chocolate Souffle

Reviewed: Oct. 12, 2009
Simple, delicious, (relatively) healthy and oh-so chocolatey. This is a perfect recipe for anyone who needs a less guilty chocolate indulgence. Serve immediately before it loses volume and deflates!

Lentil Soup

Reviewed: Oct. 12, 2009
Delicious lentil soup recipe that is super healthy! It is very flexible in terms of adjustments according to what you have (or don't have) in your kitchen pantry. This is my go-to lentil soup recipe that I can't survive without in winter!

Downeast Maine Pumpkin Bread

Reviewed: Nov. 2, 2008
What a great, delicious recipe for pumpkin bread! I've never made pumpkin bread before and my virgin attempt was a huge success. I had to adjust some baking times because I had smaller-sized pans than the ones recommended in the recipe. I love that the crust is crisp and slightly crunchy, while the innard is soft and pillowy. I also substituted the spices with the pumpkin pie spice I had in my pantry. Very delicious and I will definitely use this recipe again. And again!

Best Chocolate Chip Cookies

Reviewed: Jun. 11, 2008
Delicious, soft and chewy cookies. Underbake them by a minute or two for a softer texture. I wasn't able to achieve the crisp outside, but these are still delicious!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Apr. 15, 2008
Delicious, crisp on the outside with chewy innards. I substituted the spices with pumpkin pie spice, the only kind I had on hand. I like my cookies on the chewy side so I baked it for only 8-9 minutes and they turned out to be yummy!

Miso Soup

Reviewed: Jan. 3, 2008
Delicious miso soup recipe. I added some enoki mushrooms in mine and it was yummy. Instead of silken tofu, I used the extra firm kind and it turned out fine. You can also probably add other veggies and ingredients to make this an entree, eg. Japanese ramen and seaweed. This recipe is perfect for detoxing in the New Year and a cold wintry evening!

Classic Gingerbread Cutouts

Reviewed: Dec. 16, 2007
Unfortunately, I had no luck with this recipe. It smells like gingerbread but doesn't taste like gingerbread at all! I suppose the amounts of spices need some adjustment. However, I do enjoy the rather cakey texture of the gingerbread cookies, but not the flavor.

Gingerbread Men

Reviewed: Dec. 16, 2007
This recipe lacks gingerbread flavor. The texture came out quite snappy, which was quite nice and I can taste the butterscotch. However, this is NOT a gingerbread cookie!

Oatmeal Raisin Cookies VI

Great, simple recipe for a tasty, not-too-sweet, chewy oatmeal raisin cookie. I will definitely make these again!

Snickerdoodles I

Reviewed: Oct. 27, 2007
The recipe is very easy to follow and the cookies turned out very chewy, rich and moist! The cinnamon flavor was just right and the texture was to die for.

Chocolate Angel Food Cake I

Reviewed: Oct. 14, 2007
Simple, delicious and chocolatey without the sin. The only thing I would do different next time is to possibly use chocolate extract instead of vanilla for an extra chocolate kick!

Best Brownies

So simple and so delicious! The only other thing you can add to perfect this is to swirl creamy peanut butter on its top before baking.

Baked Tofu Bites

Reviewed: Oct. 1, 2007
So easy, healthy and delicious! What can be better? I followed the other reviewers advice and left out the liquid smoke thingy but I also improvised because I didn't have some of the ingredients. Instead of ketchup, I used the same amount of jar pasta sauce, a drizzle of sesame oil and a sprinkling of black sesame seeds in addition to the white ones. I will definitely repeat this again but I was just wondering, is it supposed to turn out a bit crunchy? Mine turned out not crunchy but I think that might be due to me piling up the marinated tofu on the baking sheet instead of carefully arranging them in a single layer...

Mushroom Kabobs

Delicious, easy and healthy, although you'll have to adjust the salt for individual taste. This recipe makes flavorful grilled veggies. I added diced onion and garlic for additional variety. This is a must-repeat!

Bacon Wrapped Hamburgers

Reviewed: Jun. 17, 2007
These burgers are delicious and very well-seasoned. The only problem I encountered was that they didn't hold together well when it was time to flip them on the grill. Other than that, it's delicious and the recipe is a definite repeat!

Peanut Butter Cup Ice Cream

Reviewed: Jun. 3, 2007
This is such a delicious, creamy ice cream! As a peanut butter lover, the pure nutty flavor is perfect (although it might overpower someone wh's not a 100% PB fan). Using 2% milk will also work for this recipe and lightens the ice cream up a bit. A definite repeat in my household!

Rempel Family Meatloaf

Reviewed: Apr. 1, 2007
Quite tasty and very easy to make. The addition of a glaze for the last 15 minutes makes it more flavorful. I used 1T brown sugar, 2T ketchup and 1T Worcestershire sauce for the glaze and it was delicious!

Buttery Soft Pretzels

Reviewed: Mar. 18, 2007
Not quite like the shopping mall pretzel but still very delicious. Thanks to previous reviewers' comments, I reduced the flour to a scant more than 3 cups and it turned out yummy and not too dense. I think in the future when I make this again, I might try glazing the pretzel with some butter before topping it with coarse salt and other sesame seeds or cinnamon sugar before putting them into the oven. This is definitely a keeper!

Pauline Werner's Beef Stew

Reviewed: Jan. 19, 2007
Looking at the recipe's shortage of salt and previous reviewers' comments, I added 3 teaspoons of instant beef bouillon and the soup's flavor turned out delicious. I liked the addition of the tomato sauce. However, this dish (I think) isn't thick enough to be considered a stew. Maybe next time I'll add some cornstarch dissolved in equal parts water towards the end. It was pretty good, but there's nothing special about it. My hubby commented about adding some spice (maybe chili powder?) for a kick. Otherwise, this is the perfect soup for bread dunking on a cold winter night.
