My cooking triumphs
In two months at Hahn's Restaurant in Stone Harbor, New Jersey having started in food prep by picking turtle meat for turtle soup, I then was graduated through each cooking station ending with the broiler and the really high end meats. Was given responsibility for the kitchen during lunches on some days. As the lead cook on those days I had responsibility for running the whole restaurant at the tender age of 17. It was a big place that seated about 250 people or more and was noted for having the longest bar on the east coast. Working prep for Sing Cheng at 410 Bank Street in Cape May, New Jersey (New York Times rated one of the best restaurants in the nation)
My cooking tragedies
The potatoes for baking at Hahn's came wrapped in foil. One day we got a batch of green baking potatoes that took forever to cook. We had to "86" baked potatoes that night. Practically unheard of to "86" baked potatoes at a steak house seafood restaurant! I got royally chewed out and teased the rest of the summer. After that a sample of the potatoes were always checked early in the day every day.
