I am a wife and mom, work and voluteer part time. I love food - and weekends are when I do my best cooking! I love making big batches that we can pack for lunch through the week.
My favorite things to cook
I enjoy trying out new recipes, particularly curries or asian dishes. I love making comfort food like stews and soups, especially when it's cold outside. I also enjoy whipping up something out of nothing, like using what's in my cupboards to create something unexpected and yummy!
My favorite family cooking traditions
The best family cooking tradition we have is lobster dinner on boxing day!

Christmas Brunch Casserole
Tried this breakfast casserole for Christmas brunch, everyone really enjoyed it! Was so easy to prepare the night before and delicious! I added 2 extra eggs, as I was feeding 7 people. Yum! definitely a keeper!

Carrot Cake III
Great recipe! I made this for my daughter's first birthday and was a hit with the little ones and the adults :) I omitted the nuts. Fantastic and icing was perfect!

Salsa Chicken Rice Casserole
I made this and like many of you, I made a few changes. Its a great recipe to change around or add to etc. I added corn and sauteed my onions with the chicken and some garlic. Added a little chilli powder too. I layered it differently than the directions stated, I had the rice with the soup mixture on the bottom and mixed the salsa in with the chicken and corn, and put that on top. I topped it off with cheese, and I only used about half of what it called for, which was plenty. Anyways, it was great idea, even though I didnt follow the directions, it turned out fantastic!
