Tomato Zucchini Casserole

Make-Ahead Slow Cooker Beef Stew

Honestly, I can't stand stew and will only make it when desperate during the winter. This was a great surprise. The meat was "like butter" and the flavors were delicious. I didn't have crushed tomatoes so used diced...no big deal at all. In my rush to get everything into the crock pot before work, I didn't read the reviews. After the fact, I did, and absolutely agree with reviewers that said there was too much liquid. Next time I will half the broth, and even at that, it still may be too much! Eyeball it. Other than that, this was delicious.

Slow Cooker Butter Chicken

We thought this was delicious. Traditionally, I (my home family) HATES anything from the crock pot. This was an exception. I followed one reviewer's suggestion and added chili powder to the recipe. I did not have "tandoori masala" so I googled it to see what is in it. I had most of those ingredients but not all, and didn't miss anything at all! One reviewer suggested adding fenugreek to the recipe but I couldn't find that either and found that depending what flavor you're going for, you can add lemon, honey and/or Dijon. I added a dash of each since I wasn't sure. The dish is very "forgiving" so don't worry about what you don't have or measuring exactly. We loved it with whatever I threw in there. I served it will chick peas in a spicy sauce I threw together. This will definitely be a repeat dish in my house. We are Indian food lovers all the way! Give it a try!

Sesame Pasta Chicken Salad

I really thought this recipe was very good. Others commented on it being too oily so I did cut down on the amount of oil. I am a sesame oil fan though (a little goes a long way) so added a drop more than called for. I followed recipe otherwise and probably will be more adventurous next time, adding a few more ingredients such as sugar snaps, bok choy, or whatever else I have on hand. Definitely a keeper!

Grilled Pork Chops with Fresh Nectarine Salsa

This was a hit it my house! Husband said it was "worthy of company." Pork chops were actually moist for a change! One suggestion, leave the salsa at room temperature for about an hour rather than refrigerate it. The flavors blend much more fully at room temperature. I'm not a fan of pork chops, and even though this was really good,may try this next time with chicken breasts. Give this recipe a try..it's easy, fool proof, and very good!

Chicken Breasts with Chipotle Green Onion Gravy

This was delicious. Like a previous rater, I had to improvise on the chipoltle seasoning. Since I had smoked paprika I used that mixed with chilli powder and cayenne. Very easy, very tasty. Will definitely make this again. Thanks Chef John!

Lentil Soup

This was quite good. I did add seasonings... extra garlic powder and red pepper flakes. I didn't have any spinach so I used fresh kale which I think gave the recipe more depth. Next time I will toss some other kind of beans in too. Enjoy!

Chicken with Quinoa and Veggies

Very good recipe. I tripled the zucchini and added extra garlic powder and crushed red pepper while it cooked. Next time I might try adding in some other vegetables, whatever is on hand. Easy preparation...easy clean-up, no leftovers...just the way I like it! This recipe would work great with shrimp. Will definitely make again. Thanks for sharing!

Pork Chops with Apple Cider Glaze

This recipe is a keeper. I'm not a fan of pork chops but these came out great. I followed the recipe to a T except that I always season pork chops with chili powder. That's the only thing I altered. Will definitely make again...soon! Thanks Chef John!

Honey Apricot Pork Chops

I'm not a pork chop fan but these were really good. I seasoned the chops with a heavy dose of chili powder since we like a kick in our food. I also did not have fresh apricots or canned, so I used apricot preserves instead. I will definitely make this again..very easy and quick!
