Excellent!! Amazing mint flavor, adorable presentation (I didn't flatten them, and they made very appealing balls!), great cookie flavor. Will for sure make these again and again!

Zucchini Pasta II

Wow... I guess it's just me, but nothing about this recipe impressed me. It also looked NOTHING like the picture, so maybe I did something wrong, but it was no good. I followed the instructions to a T and have had very few problems with recipes on this site... I love garlic, onion, and zucchini, so I was ready for a scrumptious dinner, but this was not.

Fry Bread Tacos II

I wasn't very impressed by this recipe... I made the fry bread and we used it to make tacos (like one reviewer suggested). I made the discs thinner than 1/4 inch and they still blew up much bigger in the oil - much too big to 'fold' into a taco with toppings inside. I also added a little oil to the dough (as suggested by a reviewer). I had to add flour every 30 seconds or so while kneading (very tedious for 5 minutes!!) because the dough continued to get sticky as I kneaded it. After all that work, the fry bread didn't really have much flavor. I prefer regular taco shells, which is strange, because I LOVE Taco Bell chalupas!

Yum, yum, yum!! I used ricotta fresh from Italy, and oh my goodness, they were good! One thing - instead of piling them in a pyramid and drizzling honey and powdered sugar over them, I rolled each one in honey and powdered sugar. Super good!

Sugar Cookie Icing

Great flavor, but I had to add quite a bit more of both milk and corn syrup to get an "icing" texture rather than a very stiff frosting. I made two batches (it doesn't make much) - the first time I followed the recipe directions and struggled to mix the stiff concoction. The second time, I started with the milk and added the conf. sugar a heaping tablespoon at a time until too stiff, then added the corn syrup to get the right texture (and then the almond).

The Best Rolled Sugar Cookies

Great cookies! I colored the dough green and made trees, and dipped the sides in white icing afterwards. Very easy to work with, but you have to keep it cold! Even the scraps picked up after the first rolling had to be chilled again. I rolled the dough on a sugared board, as other reviewers suggested (because I was out of flour!), and I don't think it worked very well. But since my dough was green, I would have been leary of using white flour anyway. I used the Sugar Cookie Icing from AllRecipes, and the cookies were a hit! Chewy and soft, but crisp edges. I did have a little problem with the edges crumbling when I dipped them in the icing... and they really stuck to the baking sheets. Maybe grease the sheets next time? Oh, one more thing... you have to remove the cookies from the sheets within the first minute! Otherwise they stick terribly.

Ultimate Double Chocolate Cookies

Wow... very good! Super chocolatey and great texture. I didn't add the coffee - my hubby doesn't like it. They seemed a little boring (probably because of that), but I think adding nuts would greatly improve them (with or without the coffee)! I didn't have any walnuts (I think they would be best), but I pressed a few pecans into a cookie right when it came out of the oven, and that made it tons better than it already was! I'll try walnuts in the batter next time, or press a few into each cookie before baking. Thanks so much for indulging a chocoholic!

Chicken Enchiladas I

YUM YUM YUM! These are great! My first attempt at Enchiladas, and they were great. I made the mixture in two different skillets, as my hubby hates onions and peppers and I can't live without them, and fudged a little on the taco sauce (didn't have any). Wow - soo good. Just a little bit spicy - perfect!

WOW!! Just made them for the first time, and I'm pretty sure I didn't bake them long enough, and they were still AMAZING!!! SOOOOO easy and fun to make, and sooo good! I will definately make them again! Served them with chicken enchiladas and spanish rice... yum yum!

Spanish Rice Original

super great recipe, even with lots of things left out... my hubby won't eat things with chunks in them, so that meant no onions, peppers, tomatoes, olives, or corn, but it was still GREAT. I also skipped the bacon. I did have to add 3 cups of water to get the rice to cook (tomatoes might have solved that problem), but it tasted wonderful. Thanks so much!

Stove-Top Macaroni and Cheese

Finally, a homemade mac and cheese that's at least semi-healthy that my kids will eat! I made the mistake of getting them used to the blue box, and weaning them off of it has been a nightmare. But this recipe works. I even like it, and I can't stand the blue box! It seemed like too much sauce, but then it was all needed. Reheats well... very good!

Spectacular!!! Wow... I just polished off half the pan by myself! I added onions, green peppers, 1/2 c. cheese, sliced smoked sausage (like kielbasa) and frozen peas before frying it. So easy! Delicious!

Farmhouse Barbecue Muffins

These are wonderful. I have another recipe for filled muffins that suggests using a 1/3 of each biscuit as a "lid" for each muffin. I did that with these, and it was spectacular. Thanks so much for the recipe! Bonus - my hubby doesn't like new recipes, and he loved these!

Better Help for Hamburger

This recipe was good, however I made the following changes: I added 3 potatoes (6 total). I used sweet white onions instead of red. I replaced milk and jalepeno with 1/2 can tomato soup. I cooked the potatoes first, then browned the ground beef. It was very good! It's great to have an alternative to all of the preservatives and additives in the boxed version. Now to find a homemade recipe for HB Helper using noodles!
