Beef Curry Soup

This is not a fair review of this recipe, however I was looking for a base to make a chickpea soup (not vegetarian, just for health reasons) and I decided on this. I reduced the margarine just to a tsp or a little less. I also changed the sweet potatoes to sweet potatoes and added carrot (not in the recipe but in the pic) and spinach. Oh it is so good. Thanks for the idea. I will be trying the meat version of this for supper some evening soon!!!!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Best Chocolate Chip Cookies

Made these cookies for my kids to bring to a play date. They lasted 5 min. I had saved a few in case of another baking emergency and froze them. I then caught my husband eating them and he said these are the best cookies that he has ever tasted. I guess I will have to make some more!

Oatmeal Chocolate Chip Muffins

Just finished baking these muffins. Doubled the recipe. 1/2 applesauce instead of oil and reduced baking powder by 1 tsp. Used 1/2 whole wheat flour and used only 1 c of chocolate chips (plenty). These muffins are so moist and delicious! The only thing I will do differently next time is not to use paper liners as the muffins stick terribly. Will be making often for school lunches. I would definetly recommend making these muffins!

Singapore Noodles

I wasn't sure when I made this at first if I was going to like it. I used rice noodles and about a tsp or so of sesame oil. I thought it was ok when it was just done but it seemed that as it sat overnight it got better. I just used one bag of shrimp and none of the meat. I would make this again for sure. Not quite the same as the take out noodles as they are not fried, but certainly a good healthier option. A great lunch for work.

Italian Sausage Soup with Tortellini

If I could give this 10 stars I would! This soup is so good! I am not usually a sausage fan, but I really enjoyed it in the soup. I served it for a causal dinner party with rosemary bread and some salad and it got rave reviews. I can't wait to make this again. The only thing I changed was that there was'nt any zucchni at the grocery so I used red, yellow and green peppers and some spinach. The color it added was great. I also put some fresh basil on top to serve as I felt it lost flavor as it cooked in the soup.

Mojo Roast Chicken (Pollo Asado)

The last night I spent in Havana I went to a restaurant and had chicken and rice/black beans. This chicken is exactly like the chicken that they served and it was excellent. The only thing I changed was to add a tablespoon of lemon juice to the marinade. I served it with black beans and it was amazing!!! Just like I was back in Havana (complete with salsa music and a mojito!)

Pizza Casserole

This was really excellent. The kids and my husband realy loved it. I used rotiini instead of the egg noodles. Otherwise I followed the directions exactly. I am planning on making a batch for the freezer as it got eaten up too quickly last time.

Granola Bars III

Very Good! I replaced half of the oil with apple sauce as another suggested. I also cut the brown sugar to 1/2 c and that was plenty. Used choc. chips, raisins and cranberries as I wanted them to be nut free for school. Very easy to make. Will be making them all the time!

Pork Chops with Sour Cream and Mushroom Sauce

Great with the suggestions in the other reviews. I browned pork chops and then removed them and cooked some mushrooms, onions and garlic. I deglazed the pan with some white wine and added 1 can mushroom soup and 3/4 c sour cream. I used fat free and it came out fine. I added 1 tsp of dijon mustard. I thought it tasted better the next day. I also froze the rest and it reheated nicely. It is a great make ahead meal to have to pull out of the freezer. The pork chops were so tender. My two picky kids actually liked this!

Baked Teriyaki Chicken

This was a really excellent recipe. I tried the method another user mentioned, baking the chicken in the sauce, but the sauce just mostly burned on the pan. I made another batch of sauce to serve with the chicken and it was so good. I will try the recipe as written last time. Sometimes it doesn't pay to take short cuts!

Baked Pork Chops I

I have tried many recipes from this site and I have always loved the recipes. I was so dissapointed with this recipe. Especially with all the good comments. I used fresh bread crumbs which just turned to mush in the soup mixture. It tasted like a bowl of canned mushroom soup with soggy bread in it. It was bland and I will not make this again. It also took too much oil to fry the pork chops and it was not worth the extra fat content for the outcome of the recipe.

Banana Nut Muffins

This recipe was ok. I think it would have been better if I would have followed it exactly. I doubled the recipe using 1/2 ww flour and didn't have any veg. oil after all my holiday baking so I used melted margarine. The muffins were ok, but nothing special. I am continuing my search for a healty muffin that doesn't taste boring!

Fruitcake

This fruitcake is excellent. I made it as a gift for a family member and they can't stop raving about it to everyone. Cooked a little batter in 2 ramkins just so I would know how it tased and it was so moist. I am not usually a fruit cake fan, but this was really good. Will make for gifts again. I think next year I will use mini bunt pans and wrap with celophane for a little christmas treat.

Mexican Rice II

This rice was so good I couldn't stop eating it!!! I didn't have any garlic powder, but added fresh garlic. I served it with the mexican fish recipe from this site with fresh lime and it was a really good easy weeknight meal. I will make this again and again!

Mexican Baked Fish

This was a very good recipe. I decided not to do the chips o top and served the fish in soft taco shells with the sour cream and avacado. I also spiced it up with some chili powder and garlic. I served it with the mexican rice recipe from this site and it was a really quick weeknight meal.

Pork Chops Stuffed with Smoked Gouda and Bacon

I thought this was exellent!! To save time I used maple leaf ready cooked bacon bits and it turned out great. I didn't have smoked gouda so used regular and i was a little unsure to use it anyway with the kids (they are really picky). Grilled on BBQ and served with salad (fig and balsamic dressing) which went really well with the pork.
