Mulligatawny Soup II

This recipe is very aromatic and wonderful. I did change a few things because of difficult-to-find ingredients, and preference. For example, I actually opted not to use the blender because I love soup to have chunks of veggie in it. I also added 3 chicken breasts cut into small pieces, so my version was more like a REALLY tasty chicken soup. I used ground cardamom, and curry spices instead of the actual fresh leaves and pods, and tamarind paste instead of extract because of the rarity of the ingredients. Despite the simplifications/substitutions, this soup was INCREDIBLE. This is one of the best recipes on the whole site...

Chicken Enchiladas II

There is a reason this recipe is so popular. I have been using this recipe for a year, and have yet to find anyone that doesn't like it. I sometimes add some sliced olives to it. This recipe is a must-have...

Lime Chicken Soft Tacos

I have printed copies of this recipe for my friends, and they all use it regularly. This is a FANTASTIC recipe - lots of flavor, with a satisfying, subtle heat from the oregano. This is one of the best recipes I have found on this site! If you are thinking of trying this recipe, I would highly suggest that you do!

Last Minute Chicken Dinner

This recipe is creamy and easy to make. My husband really loved it. He liked it better than I did, but I did like it, and I will be making it again occasionally. I like the blend of vegetables and I did find it easy to make. I used fresh veggies, so I covered the pan for a while to steam the veggies because I had a hard time getting them tender otherwise.

Country Chicken Supper

This was a healthy and easy recipe, but I won't be adding it to my regular recipes. My husband would not eat it. My friends loved it. I thought it was pretty good, but not good enough to make it on a regular basis. One suggestion I do have is that if you make it, soak the rice for a while in hot water to help soften it up before cooking. Otherwise, the rice takes FOREVER to soften...

Orange Cake

This cake is WONDERFUL! I actually couldn't get the glaze to properly work. Next time I am just going to make the cake and enjoy it plain. It does make a nice bundt, but I like it in a 13 X 9 pan as well because it takes less time to cook that way. If you are thinking of making this cake, you should try it!

Pork Chops with Apples, Onions, and Sweet Potatoes

Very simple. Tasted just like I hoped it would. I left out the sweet potatoes and used season salt instead of normal salt. I will be making this recipe again!

Award Winning Chili

Excellent chili! I like it best with the bacon, but the bacon can be left out and it still makes a great chili. I thought having a lot of veggies in it was going to make it taste diluted or take away from the chili taste, but it's very good with the vegetables and still tastes hearty and satisfying and like chili should. I plan on using this recipe in the future!

Sugar Cookie Frosting

This is a great recipe for sugar cookie frosting! It tastes like the frosting that is on the Lofthouse sugar cookies in the store. It's very soft and creamy. It is ONLY good for cookies. Do not use it for anything else! I used it on cake and then realized it was not right at all for any other application besides cookies.

Sour Cream Spritz

These were very good, but they are super-easy to overcook. Be very aggressive with taking them out of the oven. I never had a batch that lasted the recommended time. They all needed to come out a couple of minutes early. These are great with the "Sugar Cookie Frosting" recipe on this site. It softens them up a little and gives an extra sweetness for those who like frosted cookies.

Easy Herb Roasted Turkey

It baked my first turkey this thanksgiving using this recipe. My husband said I make better turkey than my Mother-in-Law (truly a great compliment), AND asked me to make another one a few weeks later! This is a great, easy way to make savory turkey with an aromatic herb taste. Leftovers make fantasitc sandwiches! I don't think the drippings would make good gravy, so buy gravy packets to compensate if you like gravy. Make sure that the olive oil covers the turkey breast very thoroughly. My first turkey turned out better than my second because I used too thin of a marinade on the second. Make sure the turkey is adequately slippery all over!

Whipped Sweet Potato Casserole

This is a very very good traditional casserole, but because sweet potatoes vary greatly in size, mine ended up under-spiced because they were huge, so watch out and make sure your potatoes are spicy enough. It was still tasty. This is the perfect recipe for a traditional casserole. However, I think if you combine it with the "Eggless Sweet Potato Casserole" recipe, it becomes something that is the ultimate sweet potato dish. I used the technique of whipping the potatoes (genius!). I don't think it matters too much which spice scheme you use as long as there is enough spice (The eggless recipe results in sweeter sweet potatoes). I then made the pecan topping from the other recipe and added it to the top. I cooked it according to the other directions for a while ( because the pecan topping takes time to cook, then I added marshmellows like this recipe has, and it was perfect for my tastes. When I comined the two recipes, it turned out a lot like Boston Market sweet potato casserole.

Eggless Sweet Potato Casserole

I whipped the potatoes with a hand mixer to make the base creamier and added marshmellows on top (when the dish is done cooking, add marshmellows on top and put the sweet potato dish back in the oven for 10 minutes to make the marshmellows golden brown)

Chocolate Chocolate Chip Cookies II

These are perfect. I was a little concerned when I saw that there was no salt in the recipe, but it really doesn't need it if you use salted butter. DO NOT USE UNSALTED BUTTER BY MISTAKE! They are rich and choclately and the texture is just perfect (chewy and soft yet not gooey and not flat). They freeze well too!

Beth's Chocolate Chip Cookies

Very good cookies! They are not as moist as some recipes so I am going to keep experimenting, but I would make them again. Make sure to keep an eye on them because they bake fast, and that could be part of the reason they were a little dry for me. They are really great with 1/2 peanut butter chips and 1/2 semisweet chocolate chips!
