Garlic Prime Rib

Very easy, very delicious! I made an 8 pound roast, but tripled the marinade. The flavor was nice, but not strong enough. Will consider an overnight marinade next time. The roasting time was extended, but may be partially due to my oven. My guests didn't mind the wait though!

Cinnamon-Roasted Almonds

I followed others advice and added brown sugar, extra cinnamon and vanilla. Turned out great! I used salted roasted almonds (couldn't find unsalted roasted almonds anywhere) and made three batches--only the second one was subpar because I forgot to leave the salt out.

Big Soft Ginger Cookies

Wonderful flavor! My 7 yr old daughter wanted gingerbread men though so I did add extra flour to allow for rolling the dough out. They baked well and were crisp. My family and I like crisp cookies however so the recipe was well received. Will also try it the "soft" way.

Amazingly Good Eggnog

Very nice recipe. I made it without the rum. I don't think I cooked it long enough, it was still milky rather than creamy; however everyone loved the flavor. On the first day the cinnamon wasn't overpowering, but several days later it seemed more prominent. Next time I will use cinnamon sticks for comparison. I intend to keep this as an annual Christmas tradition.

Hot Buttered Rum Mix

Very easy to make, but makes a *large* amount--I had a half-gallon container full of the mix when I was finished with the recipe. It will have to be thrown out before it will be finished since you only use 2 heaping tablespoons of mix per cup. Will definitely make again, but will scale down the amount.

Hot Spiced Cider

I made this receipe twice over the 2005 Holiday season. It was very easy to make, although I did so on the stovetop due to the fact that I didn't want to have to clean the coffeemaker. I also made a gallon at a time. Everyone who tried it thought it was great including me.
