Special Pork Tenderloin

This was awesome! I made it as written and the only thing I would change is to add more ginger. Really moist and flavorful. My six-year old son even said, "This is the best pork I've ever had!" Don't hear that very often! Try it - it's a good recipe.

Caramel Fudge Cheesecake

This is a great cheesecake recipe - it tastes wonderful and I LOVE the cheesecake part. The only change that I've made is that I used a smaller brownie package rather than the larger one suggested by the recipe. However I gave it only 3 stars because of how difficult it can be to get out of the pan! I've made it 3 times and it's difficult! I finally had a flash of brilliance though and will line the sides of the pan with parchment paper the next time I make it.

Apple Carrot Muffins

I tried this recipe specifically for my son's kindergarten class on his "helper day". It was VERY well-received. I made a couple of changes. Instead of all AP flour, I used 1/4 cup ground flax seed, 1/2 cup whole wheat flour, and 1/2 cup AP. I also didn't have canola oil and used vegetable instead - still came out great. I grated the carrots and shredded the apple to disguise the healthy ingredients even more and because we're talking about 5 year-olds here, I put some cream cheese frosting on top and told the teacher to say they were apple raisin cupcakes! As I said, they went over quite well and my husband, who hates raisins, even ate them! Oh and one other thing - I accidentally bought raisin bran crunch cereal and it was still great (got a little oats in there too!).

Poppy Seed Muffins

This is an incredibly versatile recipe. I've made it many times in many ways. My favorites include eliminating the poppy seeds and putting blueberries (which work great with the almond flavor) and eliminating the seeds and the almond and using blueberries and a cinnamon pecan struesel (which tasted a lot like coffee cake). I've also made mini-loaves instead of muffins. Honestly, I think you could change any of the flavorings, add whatever add-ins you want, and it would still be great! Happy baking!

Turtle Cheesecake

This was a wonderful recipe! I made a couple of changes. I used chocolate crumbs instead of vanilla wafers. I reserved some of the cheesecake batter - to half I added the melted chocolate chips and the other half, I added some of the caramel sauce. I swirled these 2 into the other batter before baking. When the cake came out and was cool, I put some reserved pecans and caramel on top. Then, because I had some semisweet ganache on hand, I melted the ganache and drizzled that on top too. What raves I received! Definitely a keeper.

Coffee Butter Frosting

This was a good recipe - I used it as a filling between white and devil's food cake layers. It doesn't make a lot though so you might consider doubling the recipe. I also added 2 tablespoons of STRONG coffee to up the coffee flavor and also because I needed more moisture in mine. Will definitely use again.

Bourbon Slush

I served this at our annual Kentucky Derby party this year - with several revisions - and it was a huge hit!! First of all, I served it as a punch rather than a slush. I didn't change the citrus ingredients at all but I didn't add the sugar or the tea. People raved about it and when I ran out, they were disappointed! It will definitely be a fixture at all future derby parties.

Old Fashioned Apple Dumplings

I made a lot of mistakes with this recipe (never made them before) but they still turned out fabulous! I made my own pie crust but I think next time, I'll separate it into individual portions before I roll it out. I will also make smaller portions (1/2 an apple)overall. The whole apple portion was HUGE! I forgot to put the cinnamon with the apple and just added it to the sauce instead but it came out great anyway. Also, I reserved about 1/4 of the sauce and added half and half to it to make a caramel sauce which was heavenly! I highly recommend this recipe. I don't think it's easy but I'll try it again. My husband wouldn't shut up about it! I guess it definitely has his endorsement too!

Honey Nut Granola

Excellent recipe! I substituted applesauce for the oil and it turned out great! Definitely watch that it doesn't burn - I didn't bake it for as long as the recipe suggested and it still got a little too brown. Perhaps lowering the oven setting would help.

Apple-Raisin French Toast Casserole

I made this for out-of-town guests and it was yummy! Instead of raisins, I used dried cranberries and I made sure to soak the bread with the egg mixture before I put it on top of the apples. It was quite good - not mushy. Served with a side of bacon.

Nanaimo Bars II

I made these and they were yummy but I have a few suggestions. My husband is allergic to coconut so I used mixed nuts and graham cracker crumbs. I also followed the suggestion of another rater and doubled the middle layer. I won't do that again - it came out TOO sweet. I also lined the pan with aluminum foil and greased the foil. Made it much easier to lift out and cut!

Basic British Scones

These were great! Light, fluffy, just slightly sweet. I added a bit more milk than the recipe said because I like the dough to be soft and sticky (they tend to turn out better that way). I can't wait to try some variations - orange and cranberry, currants, etc.

Berry Trifle

YUMmy!! I made this last night and it was very good! I used twinkies (as was suggested by someone else) but I think I'll use angel food cake next time. The twinkies make it a little heavy. I didn't use any condensed milk - just regular milk but adding whipped cream to the pudding made it very light and creamy! I can't wait to try it with fresh fruit. Great recipe!

English Royalty Chocolate Chip Scones
