Cream Cheese Pickles

I made these for a party and my guests just scarfed them up. Beware the recipe calculator--I bought way too much cream cheese, and not enough roast beef. Putting the rolls together was a bit challenging, I just used my hands and squeezed it all together.

Grilled Orange-and-Bourbon Salmon

My guests love it. I marinated it overnight (about 14 hours) and it wasn't overmarinated as I had feared. Used whisky instead of bourbon since that's what I had and it gave it a nice smoky flavor. Next time I'll thicken the leftover marinade on the stove with some cornstarch and serve it on the side.

Fabulous Fruit Salad

I thought it tasted just like fruit with yogurt. I added strawberries which were good, but turned everything pink. It's nice for everyday but not good enough for company.

Gingerbread Men

Nice and soft, not dry, great buttery flavor. My guests raved and ate them all. I baked them for 9-10 minutes. I will add a bit of salt and some vanilla next time. Don't overmix the dough--just enough til blended.

Squash Casserole II

This was really good. Substituted zucchini (couldn't find squash) which I only boiled for about 6 minutes then rinsed w/ cool water. 15 minutes and zucchini would have been mush. Also sauteed 2 chopped onions in butter til soft, added salt/pepper to taste, then doubled the egg/milk/suger mixture, using 1/2 cream. More salt/pepper for good measure and put in a 9x13 casserole. Don't skip the Ritz crackers on top...ymm! Even better the next day.

Rick's Special Buttercream Frosting

I've tried so many and this one beats them all. As a fresh variation, I substitute fresh strained orange juice for 1/2 the cream and add 1 tsp grated orange rind--it's delicious! Add cream with care--it can become too mushy for proper cake decorating if you use it all. Subtract 1-2 Tbsp and it'll be fine.
