Peanut Butter Frosting

This was fabulous!! Made as is, except I used 1/4 c. of milk instead of the cream. I spread it on top of a 9x13 pan of brownies. Half a recipe probably would have been enough - I had some left over. Will definately make again!

Fast and Friendly Meatballs

The only change I made to this is to add some grated Parmesan cheese, which made them even better! In the last few minutes in the oven, I put spaghetti sauce over them and then served it with pasta. Yummy!

Tangy Slow Cooker Pork Roast

I was a little disappointed in how this turned out. The meat was all right, but the sauce was a little too sweet for my taste. I made gravy out of it, but the flavor just wasn't right for gravy. I ended up serving with barbecue sauce, which covered up any taste from the sauce. It wasn't really worth the bother for me and next time I'll just dump barbecue sauce over it while it cooks.

Homemade Chicken Fettuccine

I really thought this turned out great. It took a while for the sauce to thicken up, but it ended up being just the right consistency. My only change would be to use fresh parmesan instead of dried - mine stayed kind of grainy. I ended up adding too much parmesan, too, so I will try to cut back next time.

Golden Pork Chops

Although this didn't look terribly appetizing, it was pretty good. I made the full recipe for only 4 chops - maybe next time I'll cut the soup in half and add a little sour cream so it's not so "soupy". I served it with garlic butter potatoes to pour the gravy over, which went well.

Lasagna Spirals

I have to give this four stars because my hubby really liked it, but I really didn't. I'm going to make a few changes and give it another chance. First of all, I would like to have the broccoli cooked a little more (personal preference). I substituted cottage cheese for the ricotta since I don't really like ricotta and it didn't seem to have much flavor. My biggest problem was that I set the spirals on their side in the pan, rather than seam down (duh). So, the sauce didn't cover them very well. But, the hubby like them, and that's all that matters - right? :-)

Garlic Cheddar Chicken

This was fairly easy and very delicious. I only used 4 breasts and I though the amount of butter and breading was just right, so you may need to increase the recipe for 8 breasts. I also didn't have bread crumbs, so I used crushed crackers instead and it was perfect!

Hash Brown and Pork Chop Casserole

This was good, but not great. I think if I make it again I will use another kind of soup - maybe cream of potato because I didn't really care for the celery taste. But, the pork chops were moist and it had a nice flavor otherwise.

Mexican Lasagna

This turned out delicious and my husband ate 3/4 of the pan by himself!! I actually messed up and added the salsa with the tomatoes to the meat, so I made it like Italian lasagna and made two layers of tortillas, meat/tomatoes and cheese. It turned out super!

Cheesy Potato Soup II

I was rather disappointed in how this turned out. It probably didn't help that it sat on the stove and cooked for two hours since my husband came home late. It got reall mushy and was basically just cheesy potatoes. I might try it again and not let it cook so long.

Chocolate Chip Date Nut Cake

I think this would be very good if made by the recipe. I tried to double the amount of topping, so it got a little burnt before the cake got done. It was still good, though. I will try it again and follow the recipe next time!

Broccoli and Cauliflower Casserole

I fixed this dish intending for it to be a side dish, but my husband said he didn't want anything else with it, so it was the entire meal! Plus, he ate over half of the pan by himself. So, I will be fixing it again. The only change I made was to use frozen broccoli and cauliflower, which helped cut down on prep time. It was a little too cheesy in places, but I think it would help to cut the cheese into smaller pieces next time. Yum!!!

Pretzel Salad

I have been making this for years and love it!! Although it's called a salad, it could easily be a dessert. It does take some time, but is worth every minute. It's great for potlucks or family dinners - I always get rave reviews. I highly encourage you to try it if you haven't!

Buttermilk Cinnamon Rolls

This was my first attempt at making cinnamon rolls from scratch and they turned out fantastic!! The dough is just perfect - soft and just the right taste. My husband ate about 6 or them at one sitting!! I did double the amount of brown sugar and cinnamon, but not the butter. I thought it would be too runny - I will add a little more next time and plan to roll the dough a little flatter. The only problem that I had was that I only had one 9x13 pan clean and so I put the rest on a flat cookie sheet. They spread out quite a bit when they cooked and the filling ran over the side, but they still tasted good. Next time I will use two 9x13 pans!

Key West Chicken

This chicken was awesome!! My husband's not a huge chicken fan and I usually think that chicken breasts are too dry, but we both loved these. The chicken was very moist and flavorful. I used the same marinade for zucchini and mushrooms and grilled them also. They were okay, but I think it would have been better with some rice. Will try that next time - and there will be a next time!

Pico De Gallo

My husband loves this!! I'm not a huge onion fan, so I mix it with bottled salsa to tone it down a little. It's also good on hash browns, baked potatoes or scrambled eggs - you'll find lots of uses for it! It tends to get stronger after a few days and doesn't have a great shelf-life, so fresh is best!!

Oaxacan Tacos

My husband and I are big fans of authentic Mexican restaurants and he was always hinting that I should be able to cook like that too. Well, you should have seen the look on his face when I made these tacos and they tasted EXACTLY like the ones we had eaten there!! Not bad for a gringo!! :-) I've tweaked the recipe a little - I buy really thinly cut pieces of meat and then cut them into small cubes (that's the way they do it at the restaurants I've had this dish in) and then I marinate the beef in some lime juice and salt and pepper first. I also cook the onions and pepper for a few minutes before adding the beef and cilantro and leave some raw for garnish. I also make the pico de gallo recipe on this site to serve with it. It's also not bad served with flour tortillas if you want to avoid the oil from frying the corn tortillas.
