Kristen's Parmesan Roasted Potatoes

Wow!!! made this last night on the barbeques. All I had on hand was mini potatoes, so I cut those in half tossed them in the oil mixture added some rosemary as suggested by others too. I sprayed barbeque foil with Pam, dumped the potatoes on then sprinkled the Parmesan over top!! Cooked on indirect heat for 1 hour. DELISH!

Baked Penne with Italian Sausage

3 words.....FAB U LOUS! I am always looking for great meals that can be precooked and warmed up before rushing out the door to hockey or baseball with my young boys! This was amazing. I used 4-5 hot Italian sausages from Costco and only cooked the pasta for 5 minutes. I baked the sausage in the oven, sliced it them stuck it in pan to brown a bit more with onions and some cloves of minced garlic! This could be served at a restaurant! Delicious

Roast Leg of Lamb with Rosemary

WOW!!! I added some beef broth to the bottom of the pan so the honey wouldn't stick and burn and it created the most amazing jus. I also added some balsamic vinegar to the marinade. It warmed up even better the next day. AWESOME

Keon's Slow Cooker Curry Chicken

Delicious!!! I made the following changes, some on purpose and some by accident: I bought as many low sodium soups that I could find and omitted the salt; I used 6-8 chicken breasts, added 1 bag of raw zipper bag shrimp (during the last hour), I substituted the cream of chicken soup for cream of potatoe (this thickened up the sauce), 5 tbsp curry, 2 tsp garam masala, 3/4 tsp black pepper, 1/2 tsp cayenne. These are the only changes I made, I didn't double up the soups because several people said there was a tonne of sauce. These quantities were absolutely perfect! We loved it. It had just enough kick! I also discovered this recipe at 1:30 in the afternoon and I really wanted to make it. So I cooked the chicken breasts from frozen on high for 2 hours I then took them out cut them up, which was a breeze and then put them back in with the shrimp and conitnued on high for abother 1 1/2 hours. Awesome Slow Cooker Pot Roast

FABULOUS!! I add 2 packages of Beef Oxo and then add my water. I also season the beef with just pepper (the onion soup pckg has enough salt) I brown all sides to sear in juices and then let it sit in fridge over night. I turn on the slow cooker in the morning. When I get home from work I slice the beef put it back in the slow cooker to soak up some gravy while I am cooking the sides! Comes out perfect everytime!!

White Chocolate Raspberry Cheesecake

THE BEST, MOST AMAZING CHEESECAKE EVER!!! I always use raspberry seedless jam in place of all the boiling raspberry work and crush about 25 Oreos and add 1/4 cup of butter for my crust. I TELL ANYONE WHO WILL LISTEN ABOUT THIS RECIPE! It's that good! soooooo yummy!!! If I could give it 6 out of 5 I would.

Buffalo Chicken Dip

DELICIOUS! I did added chicken pcs purchased from Costco that many use for salad, I chopped them up and mixed them in . I too used Blue Cheese dressing and increased it to 1 cup of Frank's Red Hot. This is the third weekend in a row I will make this for my husband and he told me to double up the batch......because it is Super Bowl weekend after all! :-0)

Curried Honey Mustard Chicken

DELICIOUS!!! Yum, yum, yum does not say enough! I used Digon mustard that has a seedy texture to it and bone-in, skinless, chicken thighs. I used less butter that it says and added 6 tsps of currey powder. I mixed the chicken in the marinade, stuck it in a glass baking dish and then put it in the fridge overnight. My hubby got home from work plucked it in the oven covered with foil for 25 minutes at 375 and then another 20 minutes uncovered. He turned on the rice cooker with some long grain brown rice and VOILA an absolute gourment tasting meal (that somehow he took all the credit for...lol). And leftovers tasted even better the next day for lunch! You won't be disappointed.
