Simply the Easiest Beef Brisket

Superb! I finally have a brisket recipe that produces a tender meat. Before this I could never understand why people enjoyed brisket. I used Heinekin beer, Heinz chili sauce and dark brown sugar. Followed the directions to the letter- loved the smell in the house all afternoon. Hubby even liked this and is not generally fond of brisket/pot roast meals.I served this with the roasted red potatoes on this site and the orange glazed carrots also on this site.

Orange Glazed Carrots

Instead of cooking in water, I cook the carrots in orange juice- it gives a more orangy flavor, I think I added a little ginger with the brown sugar and butter. I've made these also with regular carrots- slicing the carrots in thirds on the diagonal. Have made these several times now- my whole family likes it.

Apple Butter Pork Loin

There's an error in the baking time- the summary shows "four hours" while the text shows 3 hours. I don't think this recipe requires even 3 hours. A 1 1/2 pound tenderloin in my area comes in two pieces. I baked for 2 tenderloins (4 pieces, total weight 3.75 pounds) two hours total and it came out fully cooked and juicy. While I didn't make gravy from the cooking juices, I think it would be an excellent base and would be wonderful over mashed potatoes. This recipe is very easy- great when you are busy on a Sunday getting ready for the work week. Will definately make again.

Deb's Scallops Florentine

I don't think you need to boil the scallops first-I instead baked for about 20-25 minutes at 350 and they came out perfect. I used less Old Bay than called for- I think a tablespoon might make it too salty. Also, I don't think this takes 30 minutes prep time as the recipe says. I cooked the spinach in the micro while I made the sauce. It takes a minute or so to press the water from the spinach and then the recipe goes together quickly. I put the scallops directly in the pie plate instead of boiling. So prep time is less than 15 minutes. I would rather spend less prep time and a little more time in the oven so I can do some other things while it cooks. My husband , who is usually neutral on scallops really liked this, and I did too. Whenever I make scallops I'll use this recipe from now on.

Cabbage Jambalaya

If you are familiar with Polish food, this tastes a lot like Golumpki (sp?)but this is much less work. Instead of garlic salt, I used Lawry's seasoning salt; for the sausage I had linguica on hand(Portugese sausage)and it was very good. Kielbasa would also be excellent. I scaled the recipe up so I would have leftovers. I recommend adding water (or perhaps spaghetti/tomato sauce diluted with water) when re-heating this. My family rated this a keeper. If you think your kids don't like cabbage, you'd be surprised how much they'll like this.

Angel Hair Pasta Salad

In addition to the other review suggestions( add dill, chopped cucumber, green peppers, roasted red pepper, more shrimp) I also added some crumbled feta cheese I had on hand. Without the additions, the salad would be too bland. It's a good basic recipe though. Husband enjoyed it- a keeper that's so easy.

My husband's grandmoter is Polish and this tastes very similar to a dish she served years ago. This is scrumptious- my teenage daughter ate 3 servings! This recipe is not hard- a little time consuming perhaps. To make Sunday dinner easy, I served this with a ready to serve spiral ham, buttered noodles sprinkled with cracker crumbs and poppy seeds, and a chunky applesauce (storebought). Rye or pumpernickel bread would go well with this.

Creamy White Chicken and Artichoke Lasagna

This was very good. Next time I may add some mushrooms. Maybe reduce the cream cheese and add more milk. I didn't find it dry. I wonder if the people who said so had not covered it.

Veal Forestiere

Excellent- restaurant quality. I did not have marsala, but used a semi-sweet white table wine. I also could not find crimini mushrooms, so I just used the regular mushrooms.I usually find that liquid reduces more quickly than recipes usually state - in the case of this recipe I just added more stock and wine. I served this with pumpkin risotto.

Spinach Mushroom Quiche

This is excellent. I think the writer means "sauce mix", not soup mix. Knorr makes a lemon herb sauce mix. I like the idea of using crescent rolls. I had to fuss with them a little bit, but it wasn't that hard to to. Will surely make again.

Spaghetti Sauce with Cauliflower

This was very difficult to rate. For creativity, definitely 5 stars. We all liked it and it is healthy too. But I don't think you can confuse it with a meat sauce. One reviewer suggested adding tomato paste and more seasoning. I would agree with that. Only giving 3 stars but maybe it should be 3.5 or 3.75. I would make it again.

One Dish Chicken Noodles

This dish proves you don't need a long list of ingredients and complicated steps to make a tasty dinner. Thank you for sending this in! My family, especially the teen in our house, loved this. The only addition I made was some pepper.

Horseradish and Yogurt Crusted Salmon

Very easy and the salmon was quite moist. I did have to cook a bit longer than stated though. No one else in the family seemed impressed though (sigh) so I am not sure I will make again.

Some of the reviews ridiculously subtracted points for not being a "substitute for baklava". It's not intended to be and the submitter never said that it was. Those that use whole wheat flour in this recipe should expect different results.

Tuna Mushroom Casserole

2 cups of bow tie pasta didn't sound like much (some casserole recipes are odd in this regard), so I used the whole 12 ounce box. I kept the liquid the same, and added a little more tuna, used a larger casserole dish. I baked for 30 minutes ( instead of 40) and then added a little shredded cheddar on top ,returning to the oven a few minutes to melt. We thought it was good; wasn't dry even with more pasta. You could add some color with pimentoes and/or peas, or just serve a colorful vegetable on the side. I would make again.

Portuguese Cod Fish Casserole

It didn't come out as well as I had hoped. The cod was very dry and the potatoes took longer than 45 minutes. Had to throw out the leftovers.
