Angel Hair Pasta Salad

In addition to the other review suggestions( add dill, chopped cucumber, green peppers, roasted red pepper, more shrimp) I also added some crumbled feta cheese I had on hand. Without the additions, the salad would be too bland. It's a good basic recipe though. Husband enjoyed it- a keeper that's so easy.

Vegetarian Four Cheese Lasagna

What an original, nutritious and delicious recipe! My teenage daughter raved about it. I didn't have fresh pasta sheets so I boiled the regular dried lasagna noodles. Also, pumpkin is not in season, so I used canned. I'm looking forward to fall when I can roast a small pumpkin for this- I think it will be even better.

Spinach Mushroom Quiche

This is excellent. I think the writer means "sauce mix", not soup mix. Knorr makes a lemon herb sauce mix. I like the idea of using crescent rolls. I had to fuss with them a little bit, but it wasn't that hard to to. Will surely make again.

Grilled Pizza Wraps

These are great and so easy. I also experimented with various fillings- leftover meat balls, and mushrooms. I even used shrimp as I had some on hand. The whole family enjoys these.

Chicken Stuffed Buns

I couldn't find 6 buns, so I bought 3 large bread boules (there was only one sour dough boule, and the other two were marble). There are 3 of us, and as this was so filling we made 2 meals out of it. We thought it this was very tasty (including our 13 year old) and a twist on usual dinner entres. Will definately make again.

Cheesy Chicken Florentine

I used the Ritz crackers as one reviewer suggested becasue I thought it would be tastier than bread crumbs. I thought this was good; my husband really liked it; teenage daughter inhaled the spinach part but wasn't too interested in the chicken. There isn't anything complicated about this, but it seemed to take a little more time and effort than most "easy recipes". It probably would help if I had some leftover rice ,rather than having to cook some for the recipe. I would make this again.

Burrito Pie

I've made this 3 times. I like this twist on the usual lasagna, and the idea of using tortillas instead of having to boil lasagna noodles. A good one to take to a potluck.

Eggplant Parmesan II

Love the idea of baking, not frying the eggplant. I used more sauce- I didn't think the stated amount would be enough. Whole family enjoyed, even hubby who generally dislikes vegetarian meals.

Baked Ziti IV

This was good but I was expecting something more unique because of the rosemary and other non traditional ingredients such as sour cream. I used dried rosemary and one pound of sweet Italian sausage rather than the hamburg/sausage mix. Perhaps the sauce I used overpowered the other ingredients, and perhaps fresh rosemary would be better. This was more work than some of my other ziti recipes, but I'm not sure the taste is substantially different.

Oven Roasted Red Potatoes

I have made this several times, and depending on what else is cooking in the oven, I've adjusted the cooking time for this recipe so that everything comes out at the same time. It always comes out great ,and is so easy. I spray my casserole dish with Pam first- clean up is not hard.

Apple Butter Pork Loin

There's an error in the baking time- the summary shows "four hours" while the text shows 3 hours. I don't think this recipe requires even 3 hours. A 1 1/2 pound tenderloin in my area comes in two pieces. I baked for 2 tenderloins (4 pieces, total weight 3.75 pounds) two hours total and it came out fully cooked and juicy. While I didn't make gravy from the cooking juices, I think it would be an excellent base and would be wonderful over mashed potatoes. This recipe is very easy- great when you are busy on a Sunday getting ready for the work week. Will definately make again.
