Spinach Stuffed Chicken Breasts

I took the cover off near the end of the cooking time and increased the oven temp to get the bacon a little crisper. I probably would use less mayo next time. This went over well with my family.

Hariton's 'Famous' Vegetarian Casserole

I scaled this down to 9 servings from 36; I found I only had to bake 1.5 hours. For extra liquid, I added a little red cooking wine diluted with water. I sprinkled feta cheese when serving for extra flavor. Will make again

Mandarin Shrimp and Vegetable Stir Fry

I made it just as written- everyone in the family liked it. It's not too "hot"- the other ingredients tone down the hot sauce quite a bit.

This was excellent , even without the sesame oil, which I forgot to buy. Next time I'll try with that. I started with raw dough and guessed on the "prebaking" . I think I would bake at 375 or maybe 400 rather than 350.

Easter Meat Pie

We all enjoyed this. To make things easier I tried, for the first time, using the Pillsbury ready made fold out crusts (I've never used a store bought crust before). These are very easy to use and save time but lack the flavor of my own crust. There's plenty of dough ,so with the extra I cut out Easter shapes using cookie cutters and placed on top of the pies. I served this with fresh asparagras.

Herbed Pork and Apples

I made this just as written and I thought it was excellent; the pork was juicy and flavorful. I did not find the sauce as sweet as some others said. I wonder if they used real maple syrup- the real stuff isn't terribly sweet; the apple juice I used did not have sugar added. I felt the sauce and tart apples/ onions were a perfect accompaniment to the pork.

Italian Sausage Soup

This soup needs a sprinkling of freshly grated parmesan cheese to make it shine. Hubby and I really liked it, but for some reason teenage daughter did not. This is healthy and easy- I'd make again.

Shrimp Scampi Bake

I used large frozen shrimp directly from the freezer. This was good but I think because I cooked them frozen there was more liquid in the final result and the taste didn't have the kick I was expecting. I'll try again with the raw shrimp.

Sweet and Sour Smoked Sausage

I used more than the amount of sweet sour sauce listed, at least double. This was good and easy and I'll probably make it again. I do prefer a slightly similar recipe I learned from the Portuguese American community when I lived near New Bedford, MA: chourico sausage, onion, peppers and tomato sauce. This is usually served on rolls.

Roasted Red Pepper Chicken

Like some of the other reviewers I was concerned that cooking it on top of the stove would result in chicken too dark on the outside but not cooked enough inside. I didn't want to solely cook it in the oven, so I lightly browned them in a skillet (sprayed with Pam only; no extra oil). I then baked them, sauce in all, covered, at 350 for about 40 minutes. I also took some other reviwers'suggestions and added sauteed spinach and feta to the red peppers for the stuffing. I used non-fat sour cream. All family memembers enjoed this.

Russian Tea Cakes I

I had intended to make this along with my daughter for her 8th grade project on Russia. She didn't want to wait until I got home so she went ahead (against my better judgment) on her own. The only change she made was to use half the nuts.She said kids are not big fans of nuts. We also tried, for the first time, the relatively new Land of Lakes baking butter. This has a small amount of oil in it so that you don't have to presoften the butter. It feels hard in the refrigerator but it softens right away when you take it out. My daughter thought it was a bit odd in color. I thought these were good, but just a tad dry. I'm going to dry making them myself at another time. They are very easy to do. We also recommend rolling them twice in the confectioners sugar and be very generous with it.

Buffalo Chicken Rolls

Terrific! This is a must have recipe for those on a low carb diet ( and for everyone else who loves buffalo chicken) I found I had to cook longer than 5 minutes (about 15) to brown the chicken in the final step, but that could be my oven. The chicken was still moist though. I also used sliced provolone rather than shredded. This is very easy ,takes few ingredients, and has great flavor. My family really liked it and I will be making again soon.

Stuffed Kielbasa

I used "lite" kielbasa so I skipped the boiling step. I had never made instant mashed potatoes before and we were pleasantly surprised by the quality of the roasted garlic variety. This was tasty and very easy.

Tuscan Soup

I followed the suggestions of others and added garlic, carrot and a can of white cannelini beans. I also used baby spinach and didn't bother to chop. The result is a hearty,tasty, nutritious soup that is very easy to make.

Bacon Spinach Salad

I used baby spinach and another Kraft dressing similar to Catalina except it also has poppy seeds. I don't care for hard boiled eggs, so I added clementine slices instead(cut in half)because I had them on hand. Mandarin oranges would also work. My family loved this- my daughter tasted it before dinner and asked me to double the quantity. She was right- it disappeared.
