Healthier Pie Crust

A lot of people don't know that coconut is not recommended for those with high cholesterol, so may not be healthy for all.

Apple Cake VII

This was good and very moist, but tasted a lot like zuccini breads that I've had. I guess I was expecting something more. I think some chopped walnuts in the cake and the addition of a glaze over the top would make this 5 stars

One Dish Chicken Noodles

This dish proves you don't need a long list of ingredients and complicated steps to make a tasty dinner. Thank you for sending this in! My family, especially the teen in our house, loved this. The only addition I made was some pepper.

Spinach Enchiladas

The corn tortillas cracked after I rolled them, but once the sauce and cheese were on and baked, no one noticed. A nice, original,easy recipe my family enjoyed.

White Bean Chicken Chili

I could not find canned or fresh tomatillos in Massachusetts (went to 4 supermarkets). I had some canned zuccini w tomatoes on hand and used that. Very good!

Eggplant Supper Soup

I love recipes with just a few ingredients! This would be an especially good recipe for novice cooks because it looks like more work is involved. My husband thought it was takeout from a restaurant! Will make again.

Scrambled Eggs Done Right

I was intrigued by using mayonnaise as an ingrdient, but quite frankly this doesn't taste any different, or look different than my usual way of preparing scrambled eggs (with a small amount of milk or water).

Chicken Enchiladas II

Some of the reviewers suggested adding a can of enchilada sauce so that it wouldn't be so dry. As I was making this it appeared dry, so I added half a can to the filling and then the other half I drizzled over the top over the creamy sauce and then sprnkled with cheese. The enchilada sauce also added some needed color. My husband thought this would look good on a buffet table and I agree.

Fast and Easy Tofu Lo-Mein

The tofu wasn't changing color at all and I didn't want to wait 15 minutes or more, so I cooked it for 5-10 minutes. I don't think it hurt the results at all. We all enjoyed it and I think it will become part of our regular meal rotation. Next time I'm going to double the recipe because it was practically inhaled by my teenager!

Awesome Eggplant Rollatine

I took the advice to cut the eggplant vertically and I think it made this much easier. The 2 tablespoons of garlic powder seemed shocking, but worked fine. My family enjoyed this and I think it would be a good company dish. There are lots of pots and pans, so it's not a recipe for everyday cooking. I will definately make it again.

Pumpkin, Sweet Potato, and Leek Soup

This is a great source of Vitamin A. The sage works well in this soup, and the leeks are a good addition. My family rates this as a keeper.

Delicious Black Bean Burritos

We added corn, and then as we assembled the burritos we added a little shredded cheese (either jack or cheddar or mix) and some salsa. Teenaged daughter and my husband loved these. I thought they were good but not great. However, I'll make again because I like to make vegetarian meals occasionally, and good ones are hard to find. This was easy too.

Spinach Stuffed Chicken Breasts

I took the cover off near the end of the cooking time and increased the oven temp to get the bacon a little crisper. I probably would use less mayo next time. This went over well with my family.

Hariton's 'Famous' Vegetarian Casserole

I scaled this down to 9 servings from 36; I found I only had to bake 1.5 hours. For extra liquid, I added a little red cooking wine diluted with water. I sprinkled feta cheese when serving for extra flavor. Will make again
