Irish Chicken and Dumplings

I used the tip to cut up checken breasts before cooking- very good ides. I hesitated between 3 and 4 stars. I felt it was rather bland, but my husband really liked it. Our teen said it tasted like chicken pie filling-he thought it was ok. I used 99% fat free cream of chicken soup- maybe it would be better with regular? It was easy to make. Not sure if I would make again;maybe it's just personal taste. I looked in the James Beard cookbook and he said Chicken and Dumplings should be eaten once or teice per year, no more!

Two Ingredient Pumpkin Cake

My family was skeptical when I said what I was doing, but I made it exactly as written, baking for 25 minutes. We all liked it. The pumpkin adds vitamins but has no fat. This is easy and inexpensive as well. Recommend frosting it for presentation (I used cream cheese frosting);sprinkling with Fall colored or themed sprinkles would be a nice touch.

I read the reviews of potatoes being too hard, so I microwaved longer (12 minutes)- that seems about right. I also increased the cheese to 2 cups. My husband and I liked this very much; teenager thought "OK".

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

A great recipe for fall and winter. The white cauliflower in my supermarket was a bit dated, so I bought orange cauliflower (same taste). It turned mostly white during cooking. I didn't have the granules, so I used buillion cubes instead. I sprinkled croutons on top for serving

Pork Chops and Scalloped Potatoes

I had no problem with "tough" meat as some reviewers did. I used center cut boneless chops and only browned the outside lightly. There's no need to cook in the skillet a long time because there is long oven cooking time and the paprika will supply color. We really enjoyed this recipe; I especially liked the simple ingredients and low cost. I would use less salt though , as the canned chicken broth has a good amount of salt. salt. I served this on an unseasonably cool summer evening with corn on the cob from a local farm. Will make again in fall and winter.

Best Beef and Broccoli

I was concerned about some reviewers' comments about tough meat. I decided to start the onions first, followed by the meat. I cooked that just until it lost its red color, then added the other ingredients and cooked further. The meat was just fine. I added some garlic and had a small can of sliced mushrooms on hand so I added that.My husband loved it; I thought it was pretty good. I would make again.

Greek Pasta Salad with Roasted Vegetables and Feta

Fabulous. I needed to bake the vegetables longer to brown and somewhat carmelize them. I doubled the feta (personal preference); used dried basil as there was none in the 3 stores I visited. My family loves this.

Spaghetti Pie III

I softened the cream cheese by putting on low in microwave for about a minute. Next time I probably would put just a bit more sauce, but my family really liked as is and says it's a keeper. A good recipe for beginning cooks. I don't think you can go wrong with it. You can add a bit more cheese on top if you like; I used 2 cups

Pesto Polenta Lasagna

My supermarket does not carry prepared polenta (for slicing). The recipe should state how to prepare it, if necessary. I had high hopes for this recipe, but it did not turn out well. No one in my family liked it.

I liked this recipe for its originality and that it's healthy. It wasn't my favorite, but my husband thought it was very good and asked me to make again. I served it with Greek spanokopita triangles (purchased frozen)

Guinness® Corned Beef

I cooked this in the beer, rather than on a rack above the beer as stated in the recipe. I rubbed a little light brown sugar on the meat then mixed the remainder with the beer. The flat cut of corned beef is much better than the point cut, which is too tough. The flat cut costs more but is not expensive. I used red corned beef, only because I couldn't find the gray. Gray is much better.

Jalapeno Chicken Enchiladas

My teenage daughter made these and they were awesome, even though she forgot to use the entire amount of sour cream (she used half). She made a couple of changes: she added some taco seasoning to the mix and used more tomato sauce. A word of warning about jalapenos: she used all the seeds and the white membrane, so it was very hot! Scrape these out for a milder dish.Will be a regular dish at our house.

Aunt Carol's Spinach and Fish Bake

The stores didn't have fresh cod (only previously frozen) so I substituted another white fish. It was probably thicker than cod, soI had to cook it longer; I also increased the temp to 350 after finding 325 wasn't satisfactory. The other change I made was to add a little garlic powder to the spinach mixture. I used slightly more cheese also because I like cheese. My family liked this.

There was a little too much filling for my 9 inch pie plate- I spilled some on the way to the oven. I baked it for 45 minutes but it never set up until I refrigerated it- which should not be necessary. But the taste was delicious and I had all the ingredients on hand. If I hadn't had the problems mentioned above, this would have been 4 stars, maybe 5.
