Portuguese Cod Fish Casserole

Reviewed: Nov. 29, 2010
It didn't come out as well as I had hoped. The cod was very dry and the potatoes took longer than 45 minutes. Had to throw out the leftovers.

Sausage, Peppers, Onions, and Potato Bake

Reviewed: Nov. 29, 2010
While this was tasty, I think the total prep and cook time is more like almost 2 hours, not 1 hr and 5 minutes. Four large potatoes, 3 large onions and 4 peppers are a lot of vegetables! I had 2 skillets going at once and still had to do the peppers/onions in 2 batches. I needed 2 casserole dishes also.

German Chicken

Reviewed: Nov. 21, 2010
This really easy, which is a huge plus. The 30 minutes baking time sounded short , so I put it in for 50 minutes and timed my side dishes accordingly. The chicken was still not done, so I was a little annoyed. I put it in longer rather than microwave. Next time I will buy thin chicken breasts.

Tuna Noodle Casserole from Scratch

Reviewed: Nov. 9, 2010
My family really enjoyed this, even the daughter who doesn't like tuna. It's nice to have a recipe for this casseole that doesn't use condensed soup for the sauce! Will make again

Mediterranean Chicken with Eggplant

Reviewed: Nov. 2, 2010
This was excellent. The only thing I added was to sprinkle feta on top at the time it went into the oven.. It is not necessary to add feta "5 minutes before it's done" because feta doesn't melt. I wish people would read recipes more closely or that the editors would correct reviews such as the first one that cautions you against "boiling" the eggplant. The recipe doesn't say to boil it! I also don't understand the "bland" comments when there is 2 tsp. oregano, salt, pepper and an onion.

Portobello Penne Pasta Casserole

Reviewed: Oct. 28, 2010
I used slightly more pasta (10-12 ounces). Also I accidentally put more basil in when the cap came loose but I think the extra basil is good. The soy blended in with other ingredients, so I don't understand reviewers who say "all I can taste is soy- ewww!" They probably forgot an ingredient or measured wrong. I'm giving this 4 stars because my family rated it 4- I think it is a 3. Also I can't see how this serves 8 people; more like 5 or 6

Corned Beef and Cabbage I

Reviewed: Oct. 25, 2010
We enjoyed this very much. I also did what some reviewers suggested and used beef broth instead of water. (I used reduced sodium). IT DOES NOT TASTE LIKE BEEF STEW OR RESEMBLE IT IN any way, as someone said. I recommend a flat cut of beef instead of point cut. My corned beef did not have a spice packet so I threw in some whole black peppercorns, a bay leaf, some mustard seed , and whole allspice. Served with horseradish sauce. This recipe was r simple and good and will replace my other corned beef and cabbage recipe.

Mediterranean Puff Pastry Chicken

Reviewed: Jun. 27, 2010
I agree with another reviewer who felt you didn't need to marinate the chicken. I skipped that step too- the flavor in this dish is high already. Rose- you are a genius- thanks for sending.I urge beginners to try this-Easy , with impressive results.

Old Fashioned Coconut Cream Pie

Reviewed: May 11, 2009
I would encourage anyone to make this as written (be sure to keep stirring until thickened, like pudding. The recipe is not clear on this).Although we really liked this pie (hubby says you could go into business with this recipe), I felt that the filling did not have enough coconut flavor, and I was looking for a lighter consistency. I am going to try the suggestions of coconut milk and cornstarch instead of flour. But really, you can't go wrong with this pie. It's simple to make and people will think you are a great baker.

Shrimp Fettuccine Alfredo

Reviewed: May 11, 2009
My family loved this, but I don't think there is enough sauce for 1 pound of pasta. This is a great company dish! So easy too. Next time I will increase the sauce by about 50%

There are never enough vegetable recipes, so it's always great when you find a good one. Thanks for sending this in- whole family loved it.

Manicotti Alla Romana

Reviewed: Mar. 4, 2009
The directions say nothing about adding salt to the dish other than salting the pasta water, which other recipes for pasta call for. So, I think the criticism of too much salt is not warranted. This was very good but time consuming. The two sauces make it very rich so I would make this only for a party.

Chorizo and Lentil Stew

Reviewed: Feb. 13, 2009
I used more liquid than called for (used chicken broth rather than water); also I added some chopped carrots and spinach. I used Portuguese chourico sausage sliced, not bulk. Very good- will make again

Original Nestle® Toll House Chocolate Chip Cookies

Reviewed: Dec. 31, 2008
I grew up near the Toll House in Whitman , MA and have Ruth Wakefield's original recipe. It calls for butter, not shortening as one reviewer said. This recipe is almost identical, but Mrs. Wakefield dissolved the soda in 1 tsp hot water. Also, the Toll House always chilled the dough overnight to prevent the cookies from spreading too much. This recipe is my favorite choc chip recipe.

Chicken Alfredo with Fettuccini Noodles

Reviewed: Nov. 4, 2008
I used prepared (cooked) chicken from the supermarket as a shortcut but otherwise followed exactly. I did not feel it had a grainy texture as some said, but I used freshly grated cheese not the dried stuff on the store shelves . My husband loved this. I thought the Ricotta was a great idea and not overpowering at all. So easy too- definately will make again

Addictive Sweet Potato Burritos

Reviewed: Aug. 25, 2008
I had high hopes for this considering the unique ingredients. I used canned yams (rinsed to get rid of syrup) and took the tip to mash beans before going into pan. The bean mixture was so watery from 2 cups of water so I added the sweet potatoes to it. (the recipe is not clear). This was a lot of effort without much payback of results. Not planning to make again.
