Cauliflower Hamburger Casserole

Reviewed: Jun. 8, 2011
Easy and good. I had saved it because there are not many recipes that have cauliflower (and asparagas). I added a little more parmesan cheese and used the whole cauliflower. I used flavored bread crumbs (herb) and for the "non salt" seasoning I used a product that was a mix of pepper and "other seasonings". Next time I may increase the liguid a bit. Saying that it "hamburger helper" is not fair and that person probably didn't even make it.

Stuffed Beef and Black Bean Tamale Pie

Reviewed: May 24, 2011
We all liked this. However, I found the crust hard to spread, especially the top. When I cut it, it fell apart. The taste was good and it was easy, but I'm not sure I will make again.

Chicken Paprikash

Reviewed: May 23, 2011
This was a hit in my house. I used boneless skinless chicken thighs but otherwise followed the recipe to the letter. Will make again! Easy to make and economical.

Easy Paella

Reviewed: May 8, 2011
My grocery store didn't have saffron so I substituted turmeric. They also didn't have chorizo sausage so I used chourico (Portuguese). This was absolutely delicious!! The presentation on the platter was very attractive, but I think I might add some more color- peas? olives? You could also add mussels, clams or lobster claws.

Spinach Chicken Parmesan

Reviewed: Apr. 27, 2011
This was very good, but I wonder how people fit 6 chicken breasts in an 8 x8 pan. I used a larger pan. Also, I used a whole package of spinach and doubled the milk. I also wonder how you can dip 6 breasts in a 1/3 cup of cheese and still have any lft over to put on top. It was tasty and I wiill make again. My husband thought it came from a restaurant!

Buffalo Chicken Chili

Reviewed: Apr. 27, 2011
We loved this. To play it safe, I only used half of the chili powder and cumin. I did use the hot sauce amount called for. Next time I probably will use a little less tomato sauce- it was a little thin for ouir taste. But it tasted great- an ideal dish to bring for a potluck too

Baked Swiss Steak

Reviewed: Apr. 3, 2011
I stumbled on this recipe and I remembered that my mother made this when I was a child, over 45 years ago. It's not exactly how I remember it, but very close.I doubled the recipe, but excluded the cheese. Served with rice, but noodles would be good too. Thank you very much Delores for sending it.

Amazing Chicken

Reviewed: Mar. 16, 2011
This would be good for a beginning cook as it's simple and hard to ruin. Mine came out fine, but I wouldn't call it amazing. I would probably make it again because it's easy. I made it a very easy meal by serving with Rice Pilaf (from a box) and one of those salads that are pre-packaged. While some readers may say that's lazy or not gourmet, it certainlybeats what my co-workers serve their families every night (fast food they pick up through a drive through window).

Broccoli Chicken Divan

Reviewed: Mar. 6, 2011
Easy and good, but sort of bland. I thought a pie plate would be too shallow, so I used a deeper casserole dish. I served over rice with a side salad. I plan to make it again, but it needs seasoning.

Oven-Fried Pork Chops

Reviewed: Feb. 28, 2011
Really good and easy. I used herbed Panko crumbs. If you use stuffing mix, you probably will want to crush. Do this by putting in a ziplok bag and roll over with a rolling pin. Will definately make again.

Scrumptious Beef and Potato Casserole

Reviewed: Feb. 21, 2011
I made it exactly as written. We thought it was pretty good. "Scrumptious" is overstating it I think. Not sure I would make again.

Excellent , creative recipe. I took some short cuts and bought butternut squash already peeled and cut; also bought frozen salmon fillets. I also added the sage when preparing the squash and onions.

Cabbage Roll Casserole

The only thing I added was some garlic powder. Next time I would probably add a little pepper too. This recipe is a great family meal on a cold night. Everyone liked it. It's very easy and not expensive. Definately will make again.

Quick Hoppin' John Soup

I made exactly as written- really good and so easy. I made for New Years's (legumes and pork are considered good luck for the New Year). Will make again and again. Served with cornbread made from Marie Callender's "restaurant style" mix (excellent). Thanks for sending this!

Three Cheese Baked Ziti

Reviewed: Dec. 29, 2010
An old family favorite I've been making for over 20 years. Easy and good. I use more sauce though- about 40 to 48 ounces. As written, I think it would be too dry. I also add a little more mozzarella cheese on top

Portuguese Cod Fish Casserole

It didn't come out as well as I had hoped. The cod was very dry and the potatoes took longer than 45 minutes. Had to throw out the leftovers.
