Kielbasa Kale Stew

Very nice, simple and healthy. I mashed the potatoes in the water. I like the idea how the potatoes thicken the soup. It was fine as is, but maybe a little garlic powder could be added. Perhaps some chicken broth to replace part of the water.

Spinach and Sun-Dried Tomato Pasta

I skipped the pine nuts to save money and the bother of toasting. Used sundried tomatoes in olive oil (drained) rather than reconstituting. We had tortellini on hand so used that. Easy recipe- liked by all.

French Leek Pie

So easy and so good. Definately make your own crust. I did what others did- make extra dough when making holiday pies and store in the freezer. Gruyere is expensive but a 4 ounce package easily grates to the required amount (and a little more).

Curried Coconut Chicken

A good and easy recipe; nice for a change of pace. I don't know why people complained about the liquid - it's useful to go over the rice usually served with this. I would make again.

Baked Tofu Spinach Wrap

The "hickory smoked" tofu I used was not found in the deli area. It was where the regular tofu is and it is like a sliced deli turkey, but of course made with tofu. My husband loved this and did not believe it was tofu. Nice quick recipe and healthy with the fresh spinach.

Pumpkin Turkey Chili

You don't taste the pumpkin at all but it adds lots of vitamins and fiber to the dish. Your family will never know! I added some cumin and a little extra chili powder. You can easily adjust spices to your taste. Will definately make again

Bean Soup With Kale

My husband raved about this. My daughter, who usually isn't keen on soup had 2 helpings. I used frozen chopped kale for convenience. I also didn't bother taking the blender out. I just mashed 1 can of the beans a bit with a potato masher, right in the soup pot. This was easy and so healthy.

Ratatouille Fettuccine Alfredo

Clever idea to mix pumpkin with Alfredo. I used whole wheat fettuccine. If you don't make your own Alfredo sauce, I recommend you buy the fresh refridgerated type. It's more expensive than the jar kind, but the jar stuff is really horrible. Will definately make this again.

Sufferin' Succotash Salad

Very attractive salad. Fresh corn is not yet in season here in New England so I used whatever was trucked in from a warmer climate. I think this will be better when native corn is avaiable in mid July.

My family really liked this but I was looking for a more unique taste. I felt the soy sauce overpowered. This was easy and relatively healthy (except for the sodium). I will likely make again as my family liked it a lot and it's easy.

Fig and Lemon Chicken
