Portobello Burgers with Goat Cheese

Reviewed: May 29, 2012
Very creative and nutritious as well. I used Feta cheese. It was a filing sandwich and for the most part well received by my family.

Italian Chicken and Chickpeas

I cut down on the cayenne and red pepper flakes and it was still spicy enough (just right). I served this with a pumpkin risotto (oven baked; found recipe by searching online).

Fig and Lemon Chicken

Reviewed: May 15, 2012
Very creative recipe and quite easy. My family really liked it. Figs are very nutritious and high in fiber so I was eager to try it. I halved the recipe. Next time I may make a little more sauce.

The artichoke hearts were a nice touch. I generally made as written but I didn't use breaded chicken. Used leftover roast chicken. Will make again.

Good for a change- something new for sweet potatoes. My family thought it was just ok.

Nice and easy. My family really liked it, though next time I will probably used diced tomatoes as some other reviewers did.

Salmon Chowder

Very good, but I don't find canned salmon appealing with all the small bones (which the can says are edible). You can buy boneless canned but it is expensive. Next time I may buy frozen fillets.

i expected more sauce in a recipe like this and it doesn't make much. Pretty good and halthy enough but not sure if I'll make again.

Not as good as I had hoped. I did use raw cashews and organic unsweetened coconut.

Baja Fish Tacos

Definately will make again. Very easy and a bit healthier than standard tacos. I used a bag of coleslaw (no dressing) as the cabbage.

Pasta with Roasted Butternut Squash and Sage

Reviewed: Jan. 9, 2012
I used Itialian sweet sausage for a little more flavor. I also used pre cut squash. I roasted garlic with the squash and onion rather than adding raw garlic at the end. Some in my family don't like balsamic so I left it out. I topped with freshly grated parmesan. I didn't bother to put the pasta in the skillet; I just added the squash mixture to the pasta in the serving dish. Don't "cube" squash too small and don't overcook. I doubled the recipe and will make again. A meal in itself!

Clever idea for a meal in itself. I feared dryness based on some reviews so i added some leftover spaghetti sauce I had on hand. (was a good idea as it turned out). I also added mushrooms

Broccoli Cheese Soup VI

We loved the taste and it's so easy. It was a little watery- I might add less water next time. I doubled the cheese, added a little more onion. Also, I added a couple of drops of Tabasco.

Pork with Roasted Peppers and Potatoes

I had high hopes for this, but the potatoes took forever to soften, and then the meat became tough. My family was not very happy.

Peach-a-Berry Pie

Reviewed: Nov. 25, 2011
Everyone loved this pie. I made it for Thanksgiving with frozen fruit, since peaches and raspberries are out of season here. Instead of making vents, I used a cookie cutter to cut out a shape (I used a star) in the center of the top crust before placing it on the pie. I thawed the raspberries in a colander for 1/2 hour as the package recommended. The peaches did not need to per thawed per package instructions. I had no problems with a runny pie at all. I baked it on the lowest rack, on a preheated cookie sheet, as America's Test Kitchens recommends.

Gnocchi and Sausage Bake

Reviewed: Nov. 15, 2011
For ease of preparation and a comfort food feel while using just a few ingredients, I'm giving it 5 stars. I found a whole wheat gnocchi with sweet potato from Italy in my supermarket. In the casserole it tasted just like the standard gnocchi made with white potatoes. Great for an easy weekday meal and I served with salad.

Chicken Potato Bake

Reviewed: Oct. 24, 2011
This was blissfully easy and the potatoes were perfect. My family liked it, but surprisingly I found it a bit bland. It could be the Italian Dressing I used that doesn't have a lot of pizzazz. I thought the 1 tbsp of seasoning was going to be enough. I will try a livlier dressing next time

Moroccan Tagine

Reviewed: Oct. 12, 2011
I thought this was really good and healthy too. My husband liked it a lot; my young adult daughter not as much. I had no problems with the liquid drying out and it was great over couscous. I don't understand the "blandness" problems - it calls for cayenne pepper, coriander and garlic. You could up the cayenne pepper if you desire.

Horseradish and Yogurt Crusted Salmon

Very easy and the salmon was quite moist. I did have to cook a bit longer than stated though. No one else in the family seemed impressed though (sigh) so I am not sure I will make again.
