Flourless Peanut Butter Cookies

My mother in law gave me this recipe over 30 years ago when DH and I were newlyweds. Traditionally with peanut butter cookies you make a cross hatch pattern with a fork but this recipe doesn't mention that. I always loved making these becasue of the simple 3 ingredients.

Portobello Mushroom Stroganoff

If making with vegetable broth, you will need to season well. I used beef broth and it still needed seasoning as others mentioned. I added Worcestershire sauce and paprika. I left out the parsley for personal preference. Everyone liked it- will make again.

This is a new family favorite. I love that's only 3 simple ingredients plus the jam. The only criticism I have is that I don't think it makes 6 dozen. I got 3. Be careful not to put too much jam or it will run over the cookie.

Delmonico Potatoes

We don't use processed cheese so I substituted mild cheddar. Nice and easy; everyone liked these. I think they could use some seasoning, and maybe breadcrumbs/paprika for color. Will make again.

Baked Omelet

A good, basic dish. not just for breakfast. I made it for a simple supper to use up Sunday dinner ham and an abundant supply of eggs. Served with fruit salad.

Russian Mushroom and Potato Soup

The leeks are lovely in this soup. I would not substitute onions or scallions as some did. I topped with some shredded cheese as one reviewer mentioned, but it's not really necessary. This is easy to make and good. Thanks for posting it.

Herb Rubbed Sirloin Tip Roast

A good roast such as sirloin tip really doesn't need seasoning. Salt before cooking dries out a roast, but I thought I'd give this a try. At 145 degrees this is not the medium rare we prefer, and was somewhat dry. I'm going back to my own method.

Melanie's Beef Barley Soup

The only change I made was to substitute some of the water with beef broth, which I had on hand. I would do that again. Also, next time I'm not going to add the second amount of oil after the meat is browned. I don't think it's needed.

Whit's Chicken Enchiladas

To save time I bought cooked children. My family enjoyed these and asked me to make again. Easy and good. Used salsa when serving. To make a very rich and colorful dish, serve with guacamole,sour cream and salsa, but very good just with salsa

Salmon with Dill

I omitted the onion powder as a personal preference and used fresh dill as I had it on hand. Fifteen minutes in a glass dish was perfect for me. Always check before the stated time so you won't overcook. I served with frsh green beans and a pumpkin risotto you bake in the oven and don't have to stir

Best Ever Banana Bread

We liked this ,but I am going to stick with my regular recipe, which has more banana flavor and is just as moist. I think buttermilk is sometimes overrated as an ingredient.

Sweet Pepper Pasta Toss with Kale

This looks attractive and is healthy with the kale; also easy.However, I prefer a similar but tastier recipe on this site where the veggies are roasted (peppers, eggplant, yellow squash)and it uses balsamic .Feta,garlic and basil are used also,as in this recipe.I might make again though if I have kale to use up.

Kate's Kale Couscous

I give this high marks for creativity and ease of preparation. It was filling and healthy too . But the taste just didn't hit the high notes for me. I'm not sure what else it needs. (Someone mentioned lemon juice). My family thought it was just ok so I don't think I'll make again.

Penne with Chicken and Asparagus

I thought this was a bit bland but the pickiest member of the family raved about it. I added extra fresh garlic, mushrooms and extra freshly grated parmesan. Nice way to use asparagras and it's easy. probably will make again.

Chicken Breasts with Lime Sauce

It was tasty, but not a lot of lime flavor and I used 2 limes. I skipped the "dry on a rack" step. I don't think it's necessary at all and it saved time.

Salisbury Steak

I have never made Salisbury Steak before but was aware of it as a kind of old fashioned comfort food. We loved this and it was easy to prepare. Served with red garlic mashed potatoes and corn. Will definately make again.

Kielbasa Kale Stew

Very nice, simple and healthy. I mashed the potatoes in the water. I like the idea how the potatoes thicken the soup. It was fine as is, but maybe a little garlic powder could be added. Perhaps some chicken broth to replace part of the water.

Spinach and Sun-Dried Tomato Pasta

I skipped the pine nuts to save money and the bother of toasting. Used sundried tomatoes in olive oil (drained) rather than reconstituting. We had tortellini on hand so used that. Easy recipe- liked by all.

French Leek Pie

So easy and so good. Definately make your own crust. I did what others did- make extra dough when making holiday pies and store in the freezer. Gruyere is expensive but a 4 ounce package easily grates to the required amount (and a little more).
