Best Ever Meatloaf I

I thought this was GREAT! I did add some herbs ~ oregano, lawry's seasoned salt, a little basil... Also had to sub tomato sauce for juice and I was happy. Oh! The best part was a single layer of bacon over the top ~ added just enough extra flavor!

Tangy Slow Cooker Pork Roast

This was awesome. I accidently forgot the garlic powder, but that was OK... I cooked mine on high for 3 hrs and it was perfect. It would have been better to double the juice so that the entire meat was submerged... the top part (not in the juice) was a little on the dry side and the part that sat in the juice the whole time was divine. I also did a gravy with the juice and some cornstarch. Next time I will reduce the amount of sugar, too. I'm afraid this is going to be a weekly meal..... YUM!!!!!

Whole Grain Waffles

Love the flavor of these. That was even after reading the reviews and realizing I TOTALLY messed up the recipe. I completely left out the white flour and instead used only a total of 1/4 cup whole wheat flour (on accident). Gee! Anyway, on purpose I Left out the oil and used a total of 3/4 cup flax meal. I DEFINITELY needed cooking spray on the waffle iron to make sure they released, and took a "long" time to cook. YUM!!! Maybe I will try it again the "right" way and see if they are even better. LOL.

Korean Chicken

this was great!! I used the same amount of "stuff" but with just three boneless chicken breasts. Also left out the MSG and didn't really crush the sesame seeds. My husband is Korean (I'm not) and he said "this really tastes Korean... but I don't know why!" REALLY yummy. I might make even more sauce next time to pour over the rice.

Mocha Coffee Mix

I liked a little additional coffee. After making the recipe as stated, I scaled it for about 16 and was able to use up most of the rest of the ingredients I bought. yay!

Fudgy Chocolate Fondue

I would give this 20 stars if I could. This was GREAT! It made a LOT, though... well, it would probably be about right for 5-7 people. This was super easy and super yummy. I served it with pound cake, apples, strawberries, maraschino cherries, and forgot to serve the banana! whoops! :)

Whole Wheat Apple Pancakes with Brown Sugar Glaze

I'm glad I didn't read any reviews first or I might have been scared away. GLAD I WASN'T! I halved everything in the recipe to feed fewer ~ I thought they turned out great but I had to add a little more milk to thin them out since I like thinner pancakes. I'm not sure why so many people feel they need to modify this recipe... I think you should take them at face value. With whole wheat flour and no sugar, this recipe will only appeal to a few people. Our family was one. Everyone devoured them! I didn't make the brown sugar glaze but if I did I sure wouldn't want sugar in the cakes PLUS this glaze on top.

Chicken Enchiladas II

i was skeptical because I don't like cream of mushroom soup, but I ended up using it (my husband loves it) and it tasted great. Only had jack cheese (yum!) and added chopped olives (yumyum!)

Banana Oat Muffins

1) Used mini muffin tins w/o paper but oiled ~ should wait a few minutes after removing from oven before removing from pan so they don't stick as much. 2) Used about 3/4 c. brown sugar instead of white. 3) Used only applesauce instead of oil (same amount) 4) Used Coach's Oats instead of quick cooking oats. 5) Used Rice Milk instead of cow's milk as substitute for dairy allergies at our house. Yum! Would definitely add some cinnamon and nutmeg next time ~ wish I had thought of that earlier! This is a GREAT way to use up those yucko brown bananas! :)

Spicy Pork Stir-Fry

I thought this was great. I loved the flavor. I didn't have chili oil so used red pepper flakes instead. I just about tripled the "sauce" (lime juice etc) but only used 1.5 chili peppers. I didn't have the snap peas, but did have broccoli and mushrooms so I included those. This is for sure a keeper!!

Peanut Butter Noodles

I did a lot of modifying on this one. I added pork, brocolli, carrots, and mushrooms, all of which I recommend. I used Red Pepper and chili powder instead of chili paste. I used spaghetti noodles instead of Udon (but not necessarily "recommended" if you ask me). In my case, there wasn't enough sauce, and I would prefer it to be thicker. It tasted "good" but it was missing something... I think it wasn't quite sweet enough or something. I will have to play with it; will definitely make it again but with some modifications.

Tuna Casserole II

I only gave this 4 stars because, honestly, who loves tuna casserole?? Not me. But this was a good improvement on the original. I of course only used the veggies I had on hand ~ frozen peas (run under the faucet to defrost a bit) and fresh carrots. I used 3 cans of tuna and a one pound package of pasta, keeping it at 2 cans of soup and topping with cheddar cheese only. It was a winner for all -- even if it WAS tuna casserole!! :)

Fabulous Zucchini Grinders

I agree, cut the zucchini pieces small! I used a sausage spaghetti sauce, so satisfied my need for a bit of meat. Also used slices of fresh mozarella and ciabatta rolls, cooked in the toaster oven, without foil. I really enjoyed them, but maybe I went a little overboard on the red pepper - they were spicy!

Streusel Topped Blueberry Muffins

tastes a bit more like cake than anything else. I added some lemon juice, I think that was good. I think it could have used more blueberries, though. I made mini muffins and that was a fun alternative. I don't know that I would go to the effort to make these again, though.... I liked them better the 2nd day, hubby liked them better the first. Who knows. I am still on the quest for the ultimate muffin recipe.

Linda's Fake and Bake Chicken

I liked the idea of this recipe... but had to substitute so maybe it didn't taste quite right. Used 1.5 cups of bread crumbs (no corn flakes on hand) and they weren't all seasoned. I think the *seasoned* part of "bread crumbs" is important, flavor-wise. My husband raved about the chicken itself (I used drumsticks) But the coating was kind of bland.
