Maple Salmon

This was excellent. Even my kids ate all of it. I also marinated it in foil. I omitted the garlic salt and used real dark amber maple syrup. I served it with roasted cauliflower. My 2nd grade son actually asked for this the next day for his lunchbox!

Tina's Shortbread Chocolate Chip Cookies

These cookies are delicious!! The only change I made was adding pecans instead of walnuts. I'd also recommend chilling the rolled dough on the cookie sheets before putting them in the oven. I didn't do that and the butter in the dough got a little to soft, so the cookies spread a little more than I wanted them to. I made another batch and refrigerated the dough for about 20 minutes before baking, and the results were much better. I dusted them with confectioners sugar once cooled. They are (were) excellent cookies. Very rich. Next time I will use mini chocolate chips instead.

'I Hate Cucumbers!' Cucumber Salad

This salad was very refreshing. I made a few changes though. I increased the sugar from 2 tsp to 3 Tbs. because it was very sour. I also substituted 6 oz. plain yogurt for the mayo, and I used about 2 Tbs of dill from a tube made by Gourmet Gardens (it has a much fresher taste than dried dill, but not as strong, so more is needed). I sliced the cucumbers using the side of my cheese grater and quickly sliced the cucumbers and onion very thinly. I omitted the celery. I'd definitely make this again, especially for a summer bbq.

Classic Bran Muffins

These were delicious. I changed the recipe to make them a little healthier, like others suggested. I substituted the oil with 1/3 applesauce. I also couldn't find wheat bran, so I first made a batch with a store brand of Fiber One (the ones that look like twigs). I made another batch with All Bran bran buds. Both came out delicious. I had better results just spraying the muffin tins with Pam. When I used paper liners the first time, they didn't come off easily because of the low fat content. I've added dried cranberries, chopped walnuts, chopped dates and about 1 tsp cinnamon. I gave some away to friends and they said they really enjoyed them (their kids too!) I'll make these frequently since they're a great snack...lots of fiber too.

Monkey Bread I

This was very good..I changed a few things. I used two tubes of biscuits, 20 biscuits in total and cut into quarters, used a muffin tin so I would have individual servings. I used about 3/4 c of sugar instead of 1 cup. Put 5 pieces of dough in each muffin tin then topped with brown sugar/butter mixture.(didn't use margarine) Baked for 18 minutes and popped them out of the pan when cool. Omitted the nuts and raisins.

Slow Cooker Taco Soup

This soup was easy to prepare and delicious. Even better the next day after it was refrigerated and rewarmed. I added some shredded cheddar over the top before serving, and had some tortilla chips sprinkled over too. I froze the leftovers and just ate it recently and it was just as delicious as if I had made it fresh. Some chopped cilantro over the top would also make a nice addition.

Cranberry Crumb Pie

This was a delicious pie, although I gave it 4 stars because the cranberries were a little too sweet. I would absolutely make this again as is, but I'd also like to try using fresh cranberries and making my own cranberry sauce to make it less sweet. Everyone loved this one. I think it would also be good with a graham cracker crust, since it is basically a cheescake.

Iced Pumpkin Blondies

These were very good. Didn't give it 5 stars because I thought they would have more of a brownie consistancy, but were more cake-like. Delicious though! Even better the second day, gave the flavors time to meld.

Party Italian Wedding Soup

This was a great recipe! I omitted the chicken and didn't bother to thaw the spinach, just added it to the broth frozen. I think it could use more broth as it is a thick soup with the spinach. Delicious!

Chicken and Bacon Shish Kabobs

I was a little disappointed in this, considering the amount of time it took to assemble. The flavor wasn't as great as I thought it would be. I broiled it instead of grilling, maybe that's what made the difference.
