Chocolate Eclair Cake

I've been making this recipe for at least 20 years. My original recipe calls for three boxes of French Vanilla Pudding it has a richer flavor than the regular vanilla. I always use regular cheap graham crackers - don't bother with the cinnamon or chocolate varieties. Also since the pudding mixture is soooooo rich I stopped using frosting and just crumble up some Oreo cookies on top. This is a desert you MUST make the day ahead - the crackers really need to soften in the pudding for it to taste right.

Spicy Turkey Sweet Potato Gumbo

Family loved it! Wonderful flavor and beautiful to look at too. I made a few changes based on the fact that I forgot to buy the sausage when I was at the store. I threw in some leftover bacon, left out the green peppers as kids don't love them, exchanged the canned tomotoes for a small can of tomato paste and added an extra cup of broth to make up the difference in liquid. Came out beautifully. I served with homemade yeast rolls. I will be making this again.

This really has a good flavor. Everyone in the family loved it. There is a lot of prep work involved in the chopping but it is worth it. I'll be making this again and again.

Chicken In Basil Cream

Great flavor on this. Using fresh basil really makes a difference. I doubled the sauce and skipped the pimento peppers (family doesn't like them). I've even made this with pork and it is always a hit.

Southern Style Tomato Gravy

Wanted to try something new and this was it. Fairly easy to make - I used peeled, crushed tomatoes and left out the cream cheese. It is still on the stove, haven't served it yet but my taste-testing tell me this is something that will be very versatile and I will be making it agaiin. Thanks for posting this for us Yankees, Bella.

Sweet and Tangy Red Chicken

Made this for the first time. The family loved it and I will make it again. It was easy to do and had a good flavor. I used boneless skinless thighs and forgot the onion and it still tasted good. I'll try to follow recipe exactly next time.

Slow Cooker Tender and Yummy Round Steak

The steak is certainly tender. I made exactly as recipe called for and family liked it. For my family I'll need to spice it up just a bit to get them to LOVE it. Still, this is a great basic recipe.

Elegant Chicken

Overall good flavor but a little bland. It is also not a very attractive dish to serve to guests. Like most cooks I love to experiment and changed it a bit. Exchanged Cream of Potato for Cream of Mushroom (husb hates 'shroons). Added dried minced onion, 1 T of Worch., 2 T Mayo, 2 T Mustard - instead of wrapping chicken I poured on sauce and sprinkled real bacon bits on top of that and then sprinkled French's crispy onions on top of that. It looked much less "pasty" and the flavor was great. If salt is an issue for you (it wasn't for us) make sure to rinse the dried beef and pat dry before using.
