Soft Sugar Cookies IV

Good sugar cookies, but not spectacular. Not like the representative photo by the recipe. I wanted big, puffy, store-bought-looking cookies. These were not pillowy soft. I followed the recipe (doubled) and tried all shapes, sizes, and baking times. None produced what it decribes. They ARE, however, delicous. I brought them to work and to a snowshoe and they disappeared. A friend suggested tying margarine instead of butter for more pillowness.

Dark Chocolate Bacon Cupcakes

These never fail to impress. VERY good chocolate cake recipe without the bacon. WITH the bacon, it's something unique. I add a spoon of espresso powder and make a chocolate buttercream to top these. I have found that NO ONE dislikes them. About half the people who try them are underwhelmed with the bacon chunks (including myself) and half are just WOWed by them! This is why I call it 5 stars. Solid crowd-pleaser.

Morning Glory Muffins I

These are AWESOME. Probably the best carrot muffins I'm ever had, and one of the best things I've put in my mouth. The batter is thick, and the muffins themselves are chock full of taste and fun mouth-feel. I made mini-muffins and still cooked them for 13 mins. I made them for the guys at work at they disappeared. Not bad for a shop of metal fabricators- especially for something so low in fat. I added the nuts to the mixture. I topped with the wheat germ+some strudel topping I had.

Chocolate Fudge Buttercream Frosting

Quite good. I omitted the hot fudge (sorry) because we are out. Instead, I melted a big handful of semi-sweet morsels in bacon grease and added some 10x. I added that to the butter cream and I'm pretty stoked for the cupcakes tomorrow!

Chicken Mole

Yum!! Hubs made this with chix halves in a slow cooker for at least 5 hours.(til it fell off the bone!) He also threw in 1/4c of Hershey kisses before he realized we had the morsels. Still not too chocolatey. :) We served it over white rice.

Mini Pumpkin Muffins with Orange Drizzle

Perfect! Doubled the recipe and now I have over 4 dozen mini-muffins for my students! I added 1/2t allspice. A note about the glaze: I didn't have enough ingredients to make either orange or cream cheese glaze...so I mixed them. OJ + 10x + Philly cream cheese. Awesome!

Mema's Corn Fritters

Yum! (Okay I didn't really "measure" the ingredients and I substituted some veggies for others- sue me.) But these were SO tasty! I put corn, parm, onion, green pepper, and zucchini in mine. The fritters were a little cakey so I should have made the batter more runny. Served with a little lite sour cream! I bet leeks and beets would be good in them too. Next time!

Simmered Italian Rice

Valentino's Pizza Crust

Great! Foolproof! And definately good on a pizza stone. Double the batch and have extra for Olive-Garden-like breadsticks. (brush with garlic butter and sprinkle on a little cornmeal and parsley.) Or roll then into pencils for crunchy breadsticks. We made a stuffed-crust by rolling string cheese in it around the edges.

Mushroom-Stuffed Tomatoes

Very very good filling but did not seem to mesh with the tomatoes. I would suggest adding diced tomatoes to the filling and stuffing mushrooms rather than tomatoes.

Chicken 'n' Biscuits

Follow to the 'T' with the exception of halving the thyme (too overpowering) and adding mashed potatoes to the bottom of the casserole dish before adding the rest of the ingredients. Very very delicious, fairly easy with a quick clean-up time. What's not to love?

Salmon with Tomatoes

5 stars does not give this recipe any justice, an amazingly delicious and visually pleasing dish. I added a handful of diced mushrooms and substituted red pepper flakes and cajun seasoning for the hot sauce while not adding the butter. Paired with some steamed veggies and a glass of white wine the wife LOVED this meal. Many thanks from the both of us.

Iced Pumpkin Cookies

Meh, the flavor was great but the texture was lacking. Maybe I used too much flour or overbaked? I usually follow the directions pretty well and the recipes here have turned out for me. These were a little tougher than other cakey pumpkin cookies I've made or eaten. Gonna try a diff recipe next time.

Parmesan Basil Biscuits

Yummy and savory! I nearly doubled-up on the basil (per someone's suggestion) and I should not have; they're pretty basilly. Everything else was perfect. We had ours with country chicken gravy.

Raised Griddle Cakes

Not bad! Definately not your typical box mix. At first the kitchen smelled like a brewery, and then like baking bread. The 'cakes were filling and had a tiny bit of "mush" inside which was fun. We made the batter as directed and needed nothing extra to thicken it. We cooked them on medium heat for less than 8 minutes; I liked them golden brown and they tasted a little burnt when they were dark brown. Note: When it says let rise in FRIDGE overnight, don't try to leave it on the counter or you will have a mess (we didn't lose much). Great with maple syrup and/or peanut butter. The dog was begging for more.

Miriam's Not-So-Secret Challah

Oh wow, this is delicious and beautiful! Sweet and dense but soft. I wish I could post a picture; I curled my 2 braids into C's on my baking stone. I didn't have the seeds needed so we sprinkled on a little caraway and rosemary. It takes forever- but that's good bread!
