Simple Salmon and Spinach Sandwiches

We like this alot. I use Fat free Thousand Island dressing and chopped plain onions. I mix the salmon and the onions in my food processor and add enough dressing to let it all stick together. Really tasty!!!

Chickpea Curry

Great recipe. I followed the advice of others. I added 1/2 tsp of both ginger and cloves and 1 tsp. of cinnamon. I added only a dash of cayenne pepper and omitted the cilantro. After adding the beans (drained), I poured in some chicken broth to cook and soften the beans. I simmered it all for about 15 minutes. We heated a few slices of naan bread on the grill and dipped it in the curry. A really good meal.

Pumpkin Spice Cookie

Added 1/2 tsp. pumpkin pie spice as well as 1/2 cup walnuts and mini chocolate chips. Great cookies!

Lower Fat Banana Bread I

First lower fat banana bread to satisfy my husband. I used Smart Balance Spread (slightly lower in fat) for the margarine in the recipe. I also used 2/3 cup white whole wheat flour and 1 cup all purpose. Great bread!!!!

Dee's Date and Nut Bread

We love this bread. Very sweet. Cooked full hour and it was perfect. Substituted 1 cup white wheat flour for 1 cup all purpose and then used all purpose for the rest of the flour.

Slow Cooker Latin Chicken

I used two pounds of boneless chicken thighs and skipped the browning stage. I added a little more salsa and broth. I increased the cumin, garlic and allspice by 1/2 again. I shredded the chicken before serving all of it on rice. Very good. for a cold winter's night!

Lentil Barley Soup

Soup was very good and filling. Changes I made...sauted onion,etc. in 1 tsp. olive oil, added 1 tsp. cumin, a little more water, a medium zucchini and a few handfuls of chopped kale. I wanted some more veggies in the soup.

Pancakes I

I substitute white wheat flour for the all purpose flour, add 2 tbsps. of oat bran to the dry mix and use only 1 tbsp. of oil. It tastes great.
