Chicken Chimichangas with Sour Cream Sauce

Delish! Tasted just like my favorite restaurant's. I used around 2c water to simmer down quickly. I also started with Perdue's Perfect Portions marinated Italian Seasonings chicken breasts. I used three breasts and only about 2 oz of green chillies in my chicken mixture and that was enough. Think I might try putting meat mixture into the slow-cooker next time to let it marinate and cook slowly for a quick dinner prep. I found it made way more sour cream sauce than was needed but it was soooo good, I don't mind one bit. Thanks for sharing.

Baked Parmesan Tilapia

Double Layer Pumpkin Cheesecake

Used probably half of the mixture in the bottom layer before topping with pumpkin layer. (Also - did use puree pumpkin with pumpkin pie seasoning instead of individual spices.) Made with pie crust instead of graham crust. Good but not spectacular.

Grape-Nuts Bread

Made in my bread machine on light crust and it ended up fluffing up so big it almost opened the lid on the bread machine. Nice light bread. Will make again.

Spinach Quiche

I used 2 tblsp butter and thru in some diced ham. I did not but all of the spinach mixture into the pie crust. I agree with other reviewer who suggested might be better to split spinach mixture into two quiche. Looks beautiful, smelled fabulous, and tasted wonderful. Thank you.

Orange Chicken Stir Fry

Easy to prepare and tasted nice. I did coat the cubed chicken in some flour prior to stir-frying it. I also added a frozen bag of stir fry veggies when I added the sauce to the chicken. I cooked for about 4-5 minutes then thickened sauce with a little cornstarch and water.

Broiled Tilapia Parmesan

This has become my new standard way of making tilapia. I use seasoned salt on top of the mayo mix. I just sprinkle it on top. I don't even worry about mixing it into the mayo mix. Also, start by placing the side you want up, face down so that after you flip, you have most presentable side showing.

Granny Kat's Pumpkin Roll

Delicious. Using others' advice, I cooked it on parchment paper in a 9x13 coolie sheet. I used a towel to roll it straight out of the oven and that worked fine. Once the cream filling was made, I did keep it in the fridge because the roll is still very warm 20 minutes later when you go to fill it. After I rerolled w/icing inside, I placed it in the freezer for about 20 minutes and then served it. It was not completely set yet but absolutely delicious. Looking forward to eating the other half tonight.

Baked Potato Skins

Microwaved my potatoes and they weren't even all the way done when they came out. They were a little hard to scoop but managed. I hoped they would finish cooking in the oven and they did - BEAUTIFULLY! I used a cooking pan with holes in the bottom so I did not need to turn the potatoes - I just put them in for 14 minutes (instead of 7 then turn and another 7). When they came out, I did use a paper towel to bloat any standing oil. Wonderful flavor. Will make again - soon!

Good cookie if you like crunchy cookies. I made these for my Girl Scout troop when studying Australia. I don't like coconut and was surprised I really liked these cookies! My Girl Scouts asked for seconds!

Creamy Banana Bread

I used fat free cream cheese and they were still very creamy and good. I made some of the batter in a mini-muffin pan and just sprinkled the brown sugar/cinnamon filling on top. Turned out great. I used four bananas but thought the muffins were more "creamy" than "banana". The flavor was mild but very nice.
