Blackened Chicken Pizza with Yellow Tomato Salsa
Pretty much amazing. The chicken was delicious! VERY spicy and VERY salty; I left out the regular salt completely, but traded garlic powder for garlic salt.When the chicken came out of the pan I had to wipe it down with a paper towel! Modifications: cut spices in half and definitely leave off the salt

Best Ever Corn Muffins
With modifications, this is the best corn bread I've ever had. I modified as per another reviewer: decrease sugar to 5 tbsp, decrease vanilla to 1/2 tsp, decrease bisquick to 1 1/4 cup and increase cornmeal to 1/2 cup. I also added a can of drained corn. With how sweet this was with the decrease of sugar, i can only imagine what 9 TB would have tasted like! Modified as above, Five Star Corn Bread!

Bean and Honey Burrito Casserole
not bad. realized i didn't have honey so i threw in brown sugar and it tasted great. if anything, i'll come away with a nice tasting "honey" mustard sauce : ) anyway, dish was pretty dry; not sure yet what i will do next time to fix. more sauce? more cheese? BUT my 1 year old liked it and that makes points with me. overall mild taste, chunky bits and can't go wrong with cheese. will make again but with more modifications. UPDATE: double the sauce and chicken- that's the secret. Added mushrooms and tomatoes. Is now my favorite dinner!
