Fire-Roasted Tomato and Spinach Pasta

What a great pantry meal! I was in a rush to get dinner on the table and had no time to get groceries. I sautéed an onion with some frozen garlic, added the fire roasted tomatoes and simmered. I added some capers for some bite. I ad no creamed spinach on hand, so I just chopped what greens I had left in the fridge and threw in some spreadable cream cheese instead. I added a can of tuna for protein, and served it with spaghetti noodles and grated Parmesan. Delish! Definitely going into the busy weeknight rotation.

Pumpkin Butter

Really easy, very tasty. I tripled the recipe since I had a number of pie pumpkins to use. I roasted them till the flesh was soft, them puréed the roasted flesh. I measured it and had about 5.5 lbs of purée. I used apple cider instead of juice since that was what I had on hand. I did cut back a bit on the ginger since my kids are not big fans. This is a really forgiving recipe, adjust spices to your taste. Absolutely lovely.

Traditional Osso Buco

Mmmmm.....good! I added a bit of dried oregano and basil to the vegetables as they cooked. I also drained the tomoatoes, so the gravy wouldn't be too dilute. I served over mashed potatoes, and it was soooooo good. Definitely a keeper.

Prosciutto and Parmesan Pinwheels

Very easy, very decadent, and they absolutely disappeared!! I make them all the time as my appy to contribute to potlucks. Nice served with sweet melon or peach slices to balance the saltiness.

California Roll Salad

This sald was really great as a main dish on a hot summer's day. We added a bit more wasabi, since we like things spicy, and we cut down on the rice. If you like California sishi rolls, you'll like this salad. Next time will try a bit of sake in the dressing.
