Skillet Beef and Macaroni

I made with corkscrew pasta as that was all I had. I added roasted garlic when browning the beef, and also threw in a small can of tomato paste and some chili powder. Used red pepper vs. green. Served with grated sharp cheddar and a dollop of greek yogurt. Easy, fast, cheap = a weeknight winner!

Savory Crescent Chicken

This was very tasty! I baked chicken tenderloins with olive oil, sea salt and fresh ground pepper. I also sauteed baby portobello mushrooms and diced them up, adding them to the filling mix. Skipped the pimentos, doubled the cream cheese and threw in a handful of grated sharp cheddar. Skipped the croutons and just brushed the rolls with melted butter. These reminded me more of mini pot pies than sandwiches; my husband was in heaven. Really rich & really good!

Chicken Gruyere with Sauteed Mushrooms

Gave this one 4 stars because it was very tasty, but still needed a little extra something. I added thyme to the coating and garlic to the veggie sautee; served with lemon broccoli on the side. An easy and savory recipe!

Chocolate Banana Bread

Very good, very chocolatey. I added extra milk chocolate chips and a little extra cocoa. Baking time is a little off - 70 minutes will get the center cooked through. (I baked for 65 minutes and center was still a little wet.) Delicious, though.

Bacon Quiche Tarts

YUM! I made this today for a happy crowd, and it didn't disappoint. Following the lead from other folks' feedback, I used a lot more bacon (a whole package), added it to the egg mixture, and used a package of Grands flaky biscuits. Easy, savory, tasty!

French Beef Stew

So wonderful! I made the following tweaks: omitted the thyme (didn't have any), added a chopped red onion and plenty of minced garlic. Also added a splash of worchestershire and a bit of red wine per other reviews. Served with warm biscuits for dipping - even better the next day. Thanks for the recipe!

Chocolate Chip Banana Bread II

Soooo good - moist and chocolatey! I halved the recipe to make one loaf, and used Egg Beaters instead of eggs. Anyone know of a good substitute for the shortening? I used it but cringed when I thought of the added fat. But - so worth it. Totally delicious, especially when still warm from the oven!

Classy Chicken

Yum! Loved this recipe. Took the lead from other reviewers and added an entire package of sliced baby bella mushrooms. Also doubled the garlic and sundried toms. Only 7 points per serving if you're on Weight Watchers. Paired as suggested with steamed broccoli. No leftovers! Thanks for the awesome recipe.

Spinach Mushroom Quiche

YUM! I made a few modifications for my weight-watching self: half the butter, reduced fat crescent rolls, skim milk instead of half and half, 1 cup of egg beaters instead of the eggs. Baked for 45 minutes per other reviews - perfecto!

Broiled Tilapia Parmesan

Loved it! I am doing Weight Watchers so I made the following modifications: sprinkled garlic salt directly on the tilapia and gave it a squeeze of lemon before broiling. Broiled 2 min per side, then added a lighter version of the topping: sprayed each filet with with a few shots of "I Can't Believe it's not Butter" spray, dabbed each piece with a bit of MIracle Whip, tossed on a scant sprinkle of fresh parmesan, added a little fresh-ground pepper and another squeeze of lemon. Broiled 2 more min for a delicious, quick, and very healthy dinner!

Beef Fillets With Stilton-Portobello Sauce

This tasted wonderful but the gray sauce was extremely unappetizing to look at; I had to close my eyes with each bite. Variations to make this a 5-star delight: - get rid of the sour cream and just serve the marinated mushrooms on the side; - brown the filets for 2 min on each side, then move to a 375-degree oven for 10 minutes for a perfect medium-rare; - replace the tarrogon rub with course salt and pepper. YUM! Definitely the best-tasting filet ever...but I reiterate that the gray sauce looks almost too unappetizing to eat. Omit the sour cream, and proudly serve to guests!

Chicken Breasts with Balsamic Vinegar and Garlic

This was so easy and yummy! I took a tip from other's reviews and skipped the flour; I also loaded up on the garlic and thickened the sauce with 2 tsp. cornstarch. Used a ton of sliced portabella mushrooms - it was easy and delicious! Served with a side of garlic mashed potatos.

Crab Quiche I

Oh man, was this good. I made this as an entree for company with a simple salad - used just under a pound of lump crab, 3 eggs, and added some black pepper and fresh garlic. Easy, very rich, and impressive. I love this site!

Tomato Pie I

Very tasty; I omitted the bacon and used 1/2 mozzarella, 1/2 cheddar. Also added a drizzle of olive oil and balsamic over the top just before baking. A nice way to use up the tomatoes from the garden!

Baked Ziti I

WOW. This was really terrific baked ziti. I followed the recipe exactly, but added a bunch of garlic to the meat - yum! I used one of the brands of sauce made especially for baked pasta - 2 jars worked out perfectly. Baked covered except for the last 5 minutes, when I put it under the broiler to bubble and brown the cheese. Went great with a caesar salad and garlic bread; the provolone and sour cream were just right.

Chicken Satay

Wow. This was easy and looked impressive. Doubled the peanut butter and added extra garlic; it wasn't very spicy, so if you like it hot, definitely turn up the cumin. Marinated mine overnight and broiled for 5 min on each side - smelled great and turned out very moist and savory. This site is turning me into a culinary force to be reckoned with! My husband is pleased.
