Garlicky Baked Butternut Squash

I made this for Thanksgiving using 2 pounds of cubed, fresh butternut squash from the market. Since I only had about half the squash the recipe called for I only used 1T of olive oil, but kept everything else the same. Everyone loved it and it was super easy to prepare. I think it would be good with a little onion added and will try that next time. I would also add a little more cheese - but it could definitely be made without it.

Farm Macaroons

I can tell these WOULD taste good if they had come out. But they didn't. I had read everyone's reviews about making sure the egg whites were room temperature, and made sure to beat the whites to form stiff peaks. I think my cookies might have gone awry when I put them in the refrigerator like another reviewer said to do. I will try them again and not do that. The ones I made did not come off the waxed paper. Maybe second time's a charm!

Norway's Best Pepper Cookies

I made this for a cookie exchange party. The directions were easy to follow and the recipe came out just as I expected. I would like it to be a little spicier but it was quite good. Not the most attractive cookie ever so I would consider adding some sort of icing or powdered sugar coating just to pretty it up a bit.

Oven Scrambled Eggs

easy! I omitted most of the butter and instead sprayed with nonstick cooking spray. I also used 12 eggs and one carton of egg whites and added a dollop of sour cream and some sausage. Everyone raved!

Golden Rum Cake

I made this for a birthday party and everyone raved about it. I omitted the nuts and replaced the oil with applesauce and nobody was the wiser. I only used about 1/2 the sauce. This cake was fabulous!

Alyson's Broccoli Salad

I am not normally a big fan of brocolli but I tried this recipe and it was fantastic. I have brought it with me to several cookouts this summer and have never been able to bring home leftovers! I make it with light mayo.
