Batman's Best Caesar Dressing

This was a really good caesar! I halved the recipe and it was more than enough to nicely coat the large salad I made. I couldn't find anchovy paste unfortunately. After tasting it at first, I felt it was a bit too sour from the lemon, so I just added about a tablespoon of sugar and it balanced it out nicely. I will be putting it in my recipe book, and I would definitely recommend it!

Best Steak Marinade in Existence

Made this for the 4th, and we loved it. I added fresh garlic to the mixture and a bit more hot sauce. We will make this again, for sure!

No-Cream Pasta Primavera

I've made this recipe a few times now, and the thing I like most about it is that you can pretty much throw in any vegetable you have on hand. It's a great seasonal, healthy dish. I sometimes mix in a bit of hot sauce or chili flakes to spice it up.

Banana Banana Bread

I thought this was really tasty. I followed the recipe exactly, only I added about one and a half cups of crushed walnuts. I used 4 bananas which was a bit under 2 1/3 cups, but it wound up being fine. It was pretty dense, but that's usually what I expect from banana bread, so I had no problems! The family gobbled it up; I will for sure make it again.

Chef John's Sausage & Shrimp Jambalaya

I love me some Chef John. This was a really great recipe; I just modified it a bit based on taste preference and ingredient availability. Instead of butter I just used olive oil, and since I couldn't find Andouille, I just bought a different smoked sausage. I added some hot sauce for a bit of extra heat, I used a large can of diced tomates, I used two green peppers instead of one, I used wild rice instead of brown, and I used chicken instead of shrimp. Tasted quite delicious!

Pad Thai

This recipe was good, but needed some tweaking to really get it right. For starters, I sauteed a few cloves of minced garlic in the (olive) oil along with the chicken. Then, I used 2 eggs instead of 4. The sauce on the recipe is a bit out of whack, so I wound up tripling, doubling and adding some things to it. (Triple the vinegar and fish sauce, double the sugar, and add 2 tbs soy sauce, 1 tbs sriracha sauce, 1 tsp peanut butter and I added cayenne and extra red pepper to give it more of a kick.) I also used lime instead of lemon. It was really delicious, and tasted like Pad Thai from one of my favorite Thai restaurants. With the adjustments, I will make this again and again!

Overnight Cinnamon Rolls I

These rolls were amazing! I followed the recipe exactly, only I used a cream cheese frosting in place of the glaze. Like another reviewer suggested, to cut the cinnamon rolls I took a length of thread, placed it under the roll where I wanted to "cut", and tied a knot, making the perfect slice without crushing the dough. (I wound up putting some raisins on top of a few of the rolls before I baked them, which I recommend NOT doing as they kind of turned into little raisin-stones during the baking.) Will definitely make these again!

Easy Chicken Gyro

This recipe was pretty good; the tzatziki was flavorful, and the chicken tasted ok. My oven doesn't have a broiler (why? I don't know, it's German) so I wound up cooking the chicken in a skillet. Overall it was a good recipe, but I just felt that the chicken was lacking something; that it needed more flavor. I would definitely try it again though and experiment more with different spices.

Chocolate Ganache

Super easy and super delicious! Per another user's suggestion, I raised the cake a bit off of a cooling rack, and placed tin foil underneath the cake. When I poured the ganache on, all the extra just fell down on the foil, so cleanup was really easy.

Mediterranean Puff Pastry Chicken

These puffs were really flavorful. I followed the recipe almost exactly, except that I made smaller, hand-size puffs, and wound up dicing the chicken before hand. I used frozen (thawed..really) spinach, but make sure that you squeeze as much liquid out as possible otherwise it makes the bottom of the puffs a bit ooey-gooey. Also, next time I would salt and pepper the chicken because it was a little bland if you got a bite of it by itself. I also sauteed some onions and added them to the pile. Super yummy! I will definitely make them again.

Cajun Chicken Pasta

This recipe is really great, although I did make some changes. For the cajun seasoning, I recommend just making this recipe (http://allrecipes.com/recipe/cajun-spice-mix-2/detail.aspx), and using the whole amount that that recipe yields. I wound up using one red and one yellow pepper, didn't use mushrooms or green onion (and just used regular onions instead), and replaced the heavy cream with 2% milk, some flour and some parmesan cheese. For cooking, I first sauteed the onions and peppers until almost done, added the garlic, then added half of the chicken directly to the veggies. After the first batch of chicken was done, I took everything out of the pan and cooked the second half of the chicken. Then I added the milk, flour, and parmesan and scraped all the brown bits off of the bottom until I got a thicker sauce. I didn't even bother adding the basil, lemon pepper, salt, etc, because the sauce was already super flavorful from cooking the chicken in the cajun seasoning. Tossed it all in a bowl and it was amazing!

Chicken Puffs

Really good and super easy to make, but I wound up making a few changes. I added celery, carrots and some herbes de Provence and used a yogurt-based spread to cut down on the fat. I also used puffed pasty dough instead of the crescent roll dough (because German supermarkets don't seem to have pre-made crescent roll dough). Made 6 pocket shaped puffs and they turned out really good. I will be making these again!

Sweet, Sticky and Spicy Chicken

This dish was...so delicious. I kept trying the store bought Asian sauces and was constantly disappointed. Thankfully, I then discovered this dish and I will now never go back to the store-bought wasteland! The name of the recipe was perfect, as it turned out sweet, sticky and with a perfect amount of heat to it. I did, as per other suggestions, dust the chicken with flour before putting them in the pan. I'm now going to have to start having fresh ginger on hand, because this will definitely become a regular dish. Trust me, make double this recipe...because you'll find yourself wanting more.

Braised Balsamic Chicken

The first time I made this recipe, I followed it exactly and we thought that it was a bit too balsamic-y for our tastes. After the chicken was cooked through, I let the sauce simmer a little longer and added some brown suger to cut back on the balsamic taste. The next time I made it I halved the balsamic and substituted the remainder with white wine. The result, I thought, was much smoother than the original recipe. Both times, however, I used garlic instead of garlic salt, and sauteed the garlic with the onions (which I did before adding the chicken so that the onions would be nice and soft by the time the balsamic, tomatoes and seasonings were added). It needed a little tweaking but overall a delicious recipe.

D's Famous Salsa

I made this for a bunch of Germans at a New Year's Eve party and everyone loved it! I couldn't find the canned, sliced green chilis, but wound up finding a jar of mashed green chilis, so I used just a few spoonfuls of that. It had a great heat and I will definitely make it again.
