Shrimp Chowder

Very good! Per other reviews, I cooked the potatoes first in vegetable broth. Reserved 1 cup of broth to add to soup. Used skim milk and lowfat cream cheese.(trying to save calories and fat). Added 1 T old bay seasoning. Used 2 cups of potatoes and 12 oz of shrimp. Serves 4 very small portions.

Slow Cooker Chicken Marrakesh

Fantastic! Followed the recipe and it came out great! At first I thought it was going to be too dry, but after it cooks a while it becomes juicy. I would not make any changes to the recipe.

Sweet Corn Bread

Very good. I used light sour cream, light buttermilk ( because I had on hand), and land of lakes canola butter light to save on fat and calories. Easy to make too! Better than Jiffy and healthier too.

Turkey a la King

Great recipe! Made some changes per other reviews. Used half and half. Used 1/4 cup of finely chopped onions and 1/4 cup red peppers. I used land of lakes lite canola butter. Also used peas and carrots. I whisked together the flour and broth in a separate bowl ( afraid of lumps). Simmered a little longer to thicken up. My husband loved it! Will definately make again!

Flatlander Chili

Good recipe. Because of the other reviews, I used 1 29 oz can of tomato sauce, 1 29 oz crushed tomatoes, and 14.5 oz can of petite diced tomatoes. I used 3 T chili powder instead of 1/4 cup. Thought it was a bit spicy, so next time I will use 2 T of chili powder.

This is a great recipe. The only thing I did different was use a can of evaporated milk instead of heavy cream and cook the potatoes ahead of time. Next time I will try coconut milk.

Ruth's Red Lentil and Potato Soup

Was good. But like the other reviews I added 1 teaspoon powdered cumin. ( did not have cumin seeds) I added more carrots. Came out thick without adding the file. Could be because I added a couple of extra carrots. I think next time I will add more water and use the file since would add flavor. And maybe a little more cayenne to give it more of a kick to it.

Crustless Spinach Quiche

I usually make a recipe the way it is written, however, this time is different . I used cheddar and mozzarella cheese because that is what I had on hand. I also used fresh spinach and kale. I added minced garlic to the onions because I like garlic. One person indicated that it was too spinachy . But you can put in as much or as little as you want. I also think you can add mushrooms and green pepper ( or red) if you want. Really good!

Slow Cooker Mashed Potatoes

This is good recipe. Although I screwed up and forgot to put in. The bullion cubes and garlic while boiling the potatoes. So upset! But when mashing them I used vegetable broth to get them to the right consistency and then add the garlic. Worked out great. I think next time I will use vegetable broth. You do have to keep an eye on them though. When the crock pot starts steaming you may want to use a towel underneath the cover as other reviewers indicated so they do not get soupy.

Easy Meatloaf

I really liked this meatloaf! The only thing I did different is not use all of the onion. Thought that would be overkill. I was a little nervous about using milk but it came out great! I did uses lean ground beef. As another reviewer said, let the meatloaf sit for about 5 minutes so it does not fall apart when you cut it. The texture was great! As for the sauce, I think next time I will use less mustard.

Kay's Spaghetti and Lasagna Sauce

Great recipe. I am a vegetarian and I added Morning Star meal starters crumbles and added ricotta cheese (I made Lasagna). I am going to try this sauce for the "tomato chicken parmesan" without using the crumbles and using this sauce instead for 12oz jar sauce. I am confident it will turn out great!!

Roasted Red Pepper Soup

This soup is excellent. I did, however, added 1 c of heavy cream (not so healthy but really good) Next time I think I am going to add diced tomatoes.
