Hearty Turkey Stew with Vegetables

This was gold! I used up my leftover Christmas turkey, and I threw in a few more potatoes than called for because I had less bird than I thought. I upped the amount of stock a little for the potatoes to soak up. Also omitted the green pepper which I didn't have. Other than that, did as I was told with great, stick-to-your-ribs results! This is a keeper. Might even cheat and try it with chicken. This turned out exactly as I hoped in my head... I love it when that happens!

Banana Muffins II

These were delish. I used 3 good sized bananas from my freezer (does anyone else do this? I always end up with one really over-ripe banana from my bunch so I toss it in my banana-bag in the freezer. They're perfect for making banana breads with- just thaw a few out, and slip them out of their skins! Warning though, they WILL turn black, but don't let it worry you!). I think I could have used another one and it wouldn't have hurt. I also threw in about a cup of fresh blueberries since I had a bunch to use up and that was yummy but they would have been just fine without! Just like little wee banana loaf but without the hour + in the oven. This is my new banana breakfast treat!

Baked Salmon II

I'm laying out 4 stars for this one! This is my standard salmon treatment now, both in the oven and on the grill (LOVED it bbq'd). I can't mess this puppy up! I usually use 3 individual size frozen filets, and marinate in a ziploc bag. The only thing I do differently is no parsley... because I never have any. I could see reducing the oil a bit, but it's not a dealbreaker for me. Easily meets my three favourite criteria- tasty: check. Easy: check. Family likes: check! This is a regular.

Baked Soy Lemon Chops

These were awesome. I marinated for 4-5 hours, and they turned out really good and so tender! The marinade lent a great flavour- not super strong as I thought they might be. Just right. This is my new favourite way to serve chops. I bet they'll be good grilled on the bbq too...

Beef Stroganoff III

This was delicious. As did some others, I used round steak instead of chuck roast, and I replaced green onion with 1 regular onion. Omitted the wine that I didn't have, and of course used fresh mushrooms, since canned are nasty and wrong. Overall, it was really nice, and I could see adapting it to your crock pot as some others did... it would be even more tender. A fair bit of work, but I'll be making this again- it was a hit!

Peanut Butter Bars I

I'm dishing out 5 stars for this one! Super easy and extremely good, especially if you're a fan of Reese's cups- they're just like them... in square form. If you're not much of a baker, you can't go wrong here- they taste like way more work. Yum! (Oh, and I keep them refrigerated... they do get a bit melty at room temp. Not that I still wouldn't eat them.)

Chicken and Bacon Shish Kabobs

These were sweet! I added about 1/2 tsp of minced garlic to the marinade instead of the green onions. I opted out of the pineapple chunks and instead skewered pieces of red pepper and vidalia onion along with the chicken and mushrooms- deelish! A nice meal when you've got a bit of extra time for skewering etc. We really enjoyed the marinade- very flavourful. Will likely make these again.

Maple Glazed Ribs

DELICIOUS. I'm not sure I can describe these without cursing, they were so good. I started with 2 large slabs of good quality side ribs. The only thing I did differently was make a bit more glaze- about half again as much as was called for. I was glad I had. It worked out just right for the amount of ribs I had. I didn't even marinate for as long as it said (just couldn't wait!), but even with just an hour in the sauce these were perfect. Sweet and tender ribs. Yes, we ate them ALL. This was my first try at ribs, and I may have to retire undefeated. Definitely the way a rib wants to be treated.
